What are your meals for the week?

Good evening. Hoping for some inspiration, my meals seem to be pretty much the same every few weeks. What are your meal plans for the week?

Sorry - tend to drain them and then add fresh water and chicken stock cube!

Baked potato and cottage cheese

🤷‍♀️ we go by whatever is in the fridge/freezer/cupboard( pantry, we can walk in it,just about) depends if one of us thinks about it and gets their act together. We have some strange meals. Also have various shops to get stuff and takeaways.

I'm trying to empty my freezer and save some money so this week and next is all freezer meals! Beef pie tomorrow with some frozen leftover stew.

We did this all last week. Freezer is almost empty now I can’t wait to refill it haha

I think these are what we might make this week!

Tonight: colcannon.
Then in no particular order:

  • Baked cod, asparagus, roasted tomatoes, new potatoes, and peas.
  • Seafood pho. Prawns, mussels, lemongrass, garlic, spring onion, coriander, bean sprouts, baby corn, whole baby tomatoes, pak choi (or just cabbage as I've got loads left 😂), chilli, rice noodles. Prawn crackers and a peanut sauce on the side.
  • Pan fried salmon with roasted veg; carrots, red onion, parsnip, sprouts. I mix the veg with paprika and olive oil, and drizzle with tahini for five minutes at the end. Some sort of sauce.
  • Stuffed peppers; wild rice and mushrooms, walnuts, diced peppers and courgette. Some Stilton on top at the end. Side salad.
  • Shakshuka. I'll add in some peppers, courgette, and roasted aubergine. Side salad and crusty bread.
  • Homemade soup of some form.

Lunches will mainly be a mix of:

  • Tuna/cheese sandwiches.
  • Hummus and veg wraps.
  • Homemade squash/tomato/lentil soup.
  • Eggs on toast.
  • Cheese and crackers.
  • Salad with mixed pulses.
  • Homemade sushi (DH makes the night before).

Breakfast is usually just:

  • Toast.
  • Eggs on toast with fried tomato.
  • Omelette.
  • Crumpets - sometimes with an egg.
  • Homemade granola and yoghurt with fruit.

Last night was leftover roast… the in laws were meant to be joining us then went to see DHs brother instead, rude 🤣
Beef stew with dumplings tonight
Then Wednesday, sausage, mustard mash, veg and gravy
Thursday, Salmon with new potatoes and veg (probably just loads of tenderstem broccoli as my 3yo is just obsessed at the moment!)
Friday, fish and chips, of sorts. Fancy baked fish fillets that were reduced in Waitrose 🤣 with homemade potato wedges and peas
Saturday, not sure yet, depends what we do for the day
Sunday we’re out for lunch with friends so will be a light (and easy!) tea

Turkey Curry from the freezer thanks Christmas leftovers
Chicken Kiev and Spuds
Sausage plait with beans
Salmon with garlic, ginger, couscous and roasted cherry toms
Meatballs and Pasta
Home made Pizza
Some kind of roast depending on what I can find squirreled away in the bottom of the freezer.

Sunday, we had creamy mushroom and pepper pasta
Last night I had salad, DH had fish and chips
Tonight it's sweet potato chilli with pitta bread

Fish and prawn and vegetable paella..chicken an d veg currie ..omlette and chips with salad.tuna jacket potatoes with salad ..pasta carbanara with spinage..fish curry with rice and veggies..vegetarian chilli with rice or jackets..chicken casserole...sheppards pie ..toad in the hole with mash and veggies.

Wed - chicken curry and rice
Thurs - fish / salmon
Frid- take away DS birthday , his choice
Sat - not sure
Sun Roast chicken dinner
