What are your meals for the week?

Good evening. Hoping for some inspiration, my meals seem to be pretty much the same every few weeks. What are your meal plans for the week?

Stir fry chicken with red pepper,mange tout,and noodles in a packet stir-fry sauce

Salmon ,peas in a cream cheese sauce with pasta

Baked potatoes with (supermarket) coronation chicken

Lasagne (asda) with garlic bread

Stew with carrots, potatoes done in slow cooker.

Sausages, fried onions and cheesy mash

Pork chops in a mustard and cranberry sauce,with broccoli and jacket potatoes done in slow cooker.

To add- I bath made lads of vegetable soup yesterday which I will take for lunch all week and there's also cottage pie leftovers!

Stir fry with egg fried rice and kung pao chicken
Chicken and ginger stew
Bought ravioli with pesto and either salad or garlic bread
Jacket potatoes, cheese, beans and salad
3 bean chili with pitta and sour cream
Maybe a dal and naan bread

Today- chicken and pasta bake.
Tues-
weds- chicken curry
thurs-
fri- Chinese take away
sat- no idea as we’ll be away for the night at a show.

  • Rump steak, new potatoes, fine green beans
  • Tom kha gai with noodles and prawns
  • Cheesy beans on toast
  • Lemony chicken flatbread wraps with greek salad
  • Pasta puttanesca, maybe plus garlic bread if I remember
  • Malaysian chicken curry with (frozen readymade) roti canai
  • not a clue for the last one!

This is not a normal week, usually macaroni cheese features. Also these are the evening meals, it’s mostly just me for lunch so either ‘bits and pieces’, leftovers, or something whipped up last minute according to what needs to be used.

This week for us is:
slow roasted brisket beef with Yorkshire puddings, homemade chips and veg
ooni pizzas made with leftover brisket
Cajun prawn orzo
Chilli red pepper chicken traybake with salad
Hunters chicken
Swedish meatballs and mash
Tuscan fish with rice

Meal planning day is tomorrow so need more inspiration before then! 🤣

Lamb kofta kebabs with pita and salad.
Shepherds pie.
Italian chicken stew.
Sunday roast.
A takeaway at some point.

I do a stir fry with a packet of veg every week. Change up the (usually tofu) protein and spices/sauces for variety.

This week have just done Indo-Chinese chilli prawns with Noodles. Also planning chana masala and palak paneer - both with rice which I'll batch cook and fry up with some spices to order.

Other common meals include lamb dhansak, smoky 5 bean chilli, air fryer chips with a protein and veg (usually fish), beef bourguignon (or other nice stew/casserole), chicken tikka masala, various types of risotto/paella, assassin's Spaghetti, salads, pizza, chicken cordon bleu, steak, Jambalaya, jerk chicken.

I'd say 90%+ made from scratch although will use some ingredients that may be ultra processed like chorizo etc. Both of us enjoy cooking and have a fairly good repertoire.

Pesto pasta with spinach, peas, cherry tomatoes, etc
Baked sweet potatoes with salad and roasted chickpeas
Stuffed peppers
Vegan burger, baby potatoes, veggies
Budda bowl with rice, lots of veggies, serving of nuts, and baked tofu
Veganised spag bol
Pasta salad, so pasta with mixed beans, pepper, and cucumber, with a dressing

I'm trying to eat more whole foods and add in more pulses/lentils.

I think these are what we might make this week!

Tonight: colcannon.
Then in no particular order:

  • Baked cod, asparagus, roasted tomatoes, new potatoes, and peas.
  • Seafood pho. Prawns, mussels, lemongrass, garlic, spring onion, coriander, bean sprouts, baby corn, whole baby tomatoes, pak choi (or just cabbage as I've got loads left 😂), chilli, rice noodles. Prawn crackers and a peanut sauce on the side.
  • Pan fried salmon with roasted veg; carrots, red onion, parsnip, sprouts. I mix the veg with paprika and olive oil, and drizzle with tahini for five minutes at the end. Some sort of sauce.
  • Stuffed peppers; wild rice and mushrooms, walnuts, diced peppers and courgette. Some Stilton on top at the end. Side salad.
  • Shakshuka. I'll add in some peppers, courgette, and roasted aubergine. Side salad and crusty bread.
  • Homemade soup of some form.

Lunches will mainly be a mix of:

  • Tuna/cheese sandwiches.
  • Hummus and veg wraps.
  • Homemade squash/tomato/lentil soup.
  • Eggs on toast.
  • Cheese and crackers.
  • Salad with mixed pulses.
  • Homemade sushi (DH makes the night before).

Breakfast is usually just:

  • Toast.
  • Eggs on toast with fried tomato.
  • Omelette.
  • Crumpets - sometimes with an egg.
  • Homemade granola and yoghurt with fruit.

Tonight we had rice, chickpea curry with some left over roast salmon from yesterday.

Tomorrow is lamb chops with herby potatoes and veg.

Not thought as far as the rest of the week yet!

Always room for one more at our table! 😁 And of course! This is a loose recipe, we've kind of played with it over the years but this is the most similar!

For the broth, we use veg stock from any veg we boil throughout the week. Then fry onion, garlic, ginger, diced carrots and some tomatoes. Let it all get really really soft, add the stock and let it bubble away and reduce for ages. DH adds a bit of balsamic vinegar sometimes too, maybe a dash of soy sauce. It's a flat base we make for all sorts but it's really easy to jazz it up for pho bowls by adding some chilli or a squeeze of lime!

Thursday: bbq chicken stir fry
Friday: gamon chips and peas with egg and pineapple
saturday: pizza
Sunday: chicken roast dinner

Lamb chops with chickpea mash is AMAZING. Simmer a can of chickpeas with a stock cube until softer, add lemon juice and seasoning, then mash. Sooooo good!

Last night we had roast chicken with the assorted roast trimmings.
Tonight was mac and cheese using up a variety of Christmas cheeses and some green veg.
No idea about tomorrow, we’ll work out what we want when we get there! We don’t meal plan 😂

We had roast chicken yesterday
Today I mixed soy sauce and oil with the remains in a peanut butter jar and we had chicken stir-fry with remains of chicken from yest.
Tomorrow is meatballs.
Weds we are going to a friends.
Thurs frozen batch cook - moussaka, cottage pie or chilli are on offer
Fri I may make a chicken casserole
Sat is shopping day.

NB: I'm coeliac/milk protein allergy and nightshade intolerant (fun right?!) so that limits meals to mainly meat n veg combos. Dh has a "beige food" drawer in freezer he keeps stocked from Iceland to make up for his lack of carbs!

Seabass with dried mixed herbs and chilli flakes on a bed of chorizo, red pepper, red onion, garlic, cherry tomatoes

Steak with a salad of rocket, peach or pear and stilton
Chicken burgers with sliced avocado
Enchiladas
Cheese quesadillas with a side of sliced carrots, cucumber etc
