Can anyone recommend any good, substantial egg-based main courses?

Just that really! Trying to save money a bit, and one thing we do have is a load of eggs! We saw some yellow label multipacks and went a bit mad......

It's just me and my partner at the moment (daughter at dad's) and I'm trying to meal plan for the week, and would like some variety obviously but a lot of egg use hopefully!

We do eat meat but aren't wedded to having it every night. Have a reasonably stocked store cupboard and fridge, and can pop by a supermarket to pick up a fre bits, tho don't want to spend loads this week. I am a relatively capable cook though not a genius in the kitchen. Partner is a bit less confident but can and will cook too, so any easyish ideas I could suggest to him too.....

I can do omlettes and quiche (though any new fun takes on these, or unusual ideas for flavours would be fab). Basically I would be so grateful for any suggestions - I feel like we have been eating a lot of the same basic stuff lately, and would like to liven it up a bit!

Omelette but with curry powder mixed in egg. Add sliced peppers, mushroom etc.
Pancakes or toad in hole other options

Frittata.
Basically a giant omelette with potato and onion in it. I chuck other stuff in as well and will add slices to a packed lunch.

eggs in a bed of leeks, topped with cheese and potato.
like shepherds pie, but replacing the mince layer with well cooked leeks with eggs nestled into them. It was hard boiled egg when I had it, but you may be able to just crack the eggs into pockets of leek.

Egg fried rice. It's phenomenally flexible. Depends what you like to have in it - I tend to chop an onion, julienne a carrot, maybe chop a pepper and do some frozen peas because I'm a basic bitch

So I cook the rice, or ideally use cold rice. If it's cold I put it in a bowl and break it up really well with a fork. You want plenty because this is what the meal is. Then break one egg per person in a bowl and mix them well to break them up.

Then heat quite a slosh of veg oil in a wok on a high heat, add the chopped ingredients and stir fry. I sometimes use a teaspoon of Chinese five spice here if you like it.

Then pour in the eggs and stir well to combine with the veg. When they're mostly cooked, add the rice, mixing to combine with the other ingredients. When well mixed, serve hot.

I do like shakshuka but hold to my view that huevos rancheros usually turns out nicer.

Can you use some up by making cakes and brownies and freezing them ? Make real custard as well. Savoury pancakes with cheese and ham etc boiled eggs in a rice salad with a satay dressing is also nice

How about a nice egg custard with nutmeg? Or a big creme caramel. Yummy yummy!

Tbh I'd probably just boil them with soldiers.

Salade nicoise.

Boiled eggs are good sliced in fish pie.

Egg mayo sandwiches.
