Can anyone recommend any good, substantial egg-based main courses?

Just that really! Trying to save money a bit, and one thing we do have is a load of eggs! We saw some yellow label multipacks and went a bit mad......

It's just me and my partner at the moment (daughter at dad's) and I'm trying to meal plan for the week, and would like some variety obviously but a lot of egg use hopefully!

We do eat meat but aren't wedded to having it every night. Have a reasonably stocked store cupboard and fridge, and can pop by a supermarket to pick up a fre bits, tho don't want to spend loads this week. I am a relatively capable cook though not a genius in the kitchen. Partner is a bit less confident but can and will cook too, so any easyish ideas I could suggest to him too.....

I can do omlettes and quiche (though any new fun takes on these, or unusual ideas for flavours would be fab). Basically I would be so grateful for any suggestions - I feel like we have been eating a lot of the same basic stuff lately, and would like to liven it up a bit!

Egg fried rice and egg fried noodles are a go to easy meal for me!

Shakshuka also an easy, cheap meal.

Oh wow, thank you guys! I had somehow forgotten about shakshuka even though I used to cook it all the time a few years ago (it was my ex's favourite food pretty much!). It's lush and so easy - will definitely be doing that.

I am loving the idea of a curried type omlette and I think there's lots I could do there in terms of fillings - that is a magnificent idea.

You are all so kind - and please, keep the ideas coming! Thank you for taking the time everybody......

Fried rice, soy sauce, spring onion and fried egg on top with chilli flakes, broccoli on the side.

Half large potatoes, bake, scoop out potato, mix with Creme fraiche, chives and put back in to potato skin - re-bake - soft fried egg on top with a few chives and chilli flakes. Green veg on the side.

Full of anything omelette - whatever veg/meat is in the fridge thrown into an omelette & salad or baby potatoes steamed, smashed and roasted.

Fried egg, left over boiled potatoes heated up in milk with onion, cloves and bay in the pot, onion taken out, potatoes mashed with some of the hot milk and some butter. Add yr brown sauce - pure comfort food.

The baked potato one is my favourite meal in the world.

I love frittata with onion, fried potato peas and red peppers, some oregano and a bit of cheese on top. DC hate it for some reason, even though they love all the ingredients, so we rarely have it, but it tastes and smells so good.

You could do Croque Madame: ham, bechamel and cheese toastie with egg on top.

Egga florentine: poached eggs with steamed spinach on a toasted muffin

Plain egg and chips - I like a healthy version with poached egg and oven baked fries with peas or baked beans

Egg mayo salad.

Rice topped with wilted spinach with poached eggs, spring onions & a dollop of full fat Greek yoghurt. Or you could melt cheese over the spinach rather than add yoghurt.

Egg florentine pizza.
Boil a ham, slice quite thickly, fry up slices then top with a poached or fried egg. This is nice with mash & green veg or with fried mushrooms & spinach if you’re low carb.

Cheesy scrambled egg.

Tuna nicoise.

Oyakodon.

There are lots of egg based low carb recipes.

Thanks again. And again, any more welcome. I think I might start keeping a list of these for when I feel stuck for cooking ideas in the future too!

Eggs mornay.
line dishes with mashed potato, halve hard boiled eggs and lay them on the potato. Cover with cheese sauce and town under grill. Cook

In Spain we have huevos rotos or estrellados, which is basically some fried potato slices with some cured ham slices, cheese and fried eggs on top. There's lots of olive oil involved and plenty of recipes online. Healthy it's not, but it's simple and very comforting somehow.

Carbonara uses 3 eggs.

omelette , with any veg that need using!
quiche (goats cheese and caramelised onion is nice)
egg fried rice, add any leftover meat or veg
kedgeree. (Smoked basa is cheap and you can use less fish and more eggs if you want)
Macaroni cheese or cauliflower cheese work well with hard boiled egg sliced in (and sliced tomatoes on top)
smashed avocado and poached eggs
shaksuka
miso broth with noodles, pak choi/peppers/ mushrooms and a halved soft boiled egg or two.
bubble and squeak: mashed potato and cabbage, fried up (or grilled til crispy on top if you prefer) and served with a poached or fried egg on top
dessert: French toast and berries (dip bread in egg, fry in a little butter, dust with icing sugar, serve with berries- yellow sticker if needed! Banana would work too but I hate banana)

Add soy sauce and a little sugar to the omelette and serve with rice and sautéed tenderstem broccoli finished with sesame seeds
