What's actually IN your (massive) salad?

My regular salad is: (I eat this in one sitting)

Spinach leaves as the base two decent handfuls
A few rocket leaves
Cherry tomatoes (4) cut in half
Teaspoon of pesto
Half an avocado chopped up
One beetroot chopped up
Diced cucumber
A tin of tuna

Mix it all around. Delicious.

I like my massive salad Mexican style (with huge apologies to the people of Mexico).

Finely diced onion, tomato and red chilli is the base and then I add other stuff I can chop really small. Definitely a fruit, mango or pineapple are my faves and maybe avocado and red pepper, celery. Whatever I’ve got. Some chicken or cheese on top if I have any. Loads of frozen chopped coriander, lime juice and salt. Tortilla chips would probably be the right thing to eat it with, but I never have any so I shovel it onto cream crackers. It’s my favourite lunch.

I find a bowl of leaves really hard work to get through,but a finely chopped salad is a winner every time.

mixed lettuce
cucumbers
pickled onions
feta cheese
toasted rice
avocado
champagne vinagrette

planning to make one this weekend with
Mixed lettuce
pickled carrots
water chestnuts
red peppers
sesame miso dressing

I prefer chopped salads.
if I’m in private and I didn’t make the salad, I’ve been known to grab a knife and do some quick chopping before I eat. Not exactly polite in front of people.

Yum.

I like spinach and rocket, avacado, beetroot, sweetcorn, goats cheese. Plus all the other salad normal standard bits like tomatoes and cucumbers etc.

I agree about preferring chopped salads to leafy ones. I’m not very good at making them but I used to love le Pain Quotidiene’s cobb salad- chopped egg, avocado, chicken, lettuce, cucumber, olives, avocado with some dough sticks. Also love Pizza Express’ salads though not sure how many they still do. Particularly enjoyed their chicken & goats cheese salad.
Might try & recreate a delicious goats cheese salad I had from a cafe recently- chopped tomato, apple, beetroot, grated carrot, grilled walnuts with a whole roasted goats cheese on top.

My substantial salad (as I like to call it) has to have pan fried halloumi and some prosciutto with leaves, seeds, avocado, red onion, chunks of a ripe good quality tomato and thick sticky balsamic

Salad leaves
Cherry tomatoes
Cucumber
Red Onion

Then either
Chicken breast
Feta Cheese
Or warm goats Cheese with pomegranate seeds and pomegranate molasses
Drizzled with some Greek Olive oil.

I'll sometimes put Quinoa, roasted sweet potato and avocado with the feta and I've started making my own croutons.

My favourite salad...
A head of broccoli, (I don't bother with the thick stalk)
Bunch of spring onions
Two pink lady apples
Two medium carrots
Can of rinsed chickpeas
Parsley
Handful of chopped nuts
A scattering of dried fruit (I like cranberries but can use whatever)
Pomegranate seeds
Dressing - 3 tbs olive oil, 1.5tbs wine vinegar, 1tbs Dijon, half tbs honey, clove of garlic, salt/pepper

I sometimes add leaves if I have some, or chopped peppers. I top with crumbled feta

In my huge salad I had on Tuesday evening I had:

Smoked salmon
Avocado, cut in half
Potato salad (usually home made but from Waitrose)
Two tomatoes, lettuce, spring onions
One hard boiled egg cut in half and yolk removed, I only like the white
Two cheese triangles
Two slices of smoked cheese with ham
A bit of garlic and herb mayonnaise

It was lovely!

Quinoa, green lentils, pickled red onion, green olives, radish, tomatoes, green, red & yellow pepper, salad dressing of lemon, dijon mustard, white wine vinegar. All prepped & stored for a few days in fridge. I usually add spinach/ rocket leaves/ avocado to it when serving.

Freezing pomegranate seeds is actually genius, I can never finish a whole carton thing within a week.

Base:
12 cherry/grape tomatoes
1 bell pepper
2 Persian cukes/half long English cuke
goat feta

dressing: evoo and fresh lemon juice, bit of salt
lately Olive Garden vinaigrette (or your fave)

Add ins when i've got it:
left-over salmon fillet/chicken
grapes/mango/berries
croutons/small chunks of baguette or naan
Kalamata olives (or your fave)
romaine/rocket/spinach
1/2c wild/brown rice/left-over plain pasta
