What to make with chicken breasts

For dinner for the dc?
Dh and I are on leftovers, dh isn’t very well but he usually cooks.
I think I’ll do fajitas, what would you make with chicken breasts? I’d actually get them a takeaway because I hate cooking but they need using up so I’ll bite the bullet!

I use chicken a lot.
Tonight we have some.diced chicken in the slow cooker with leeks, cream, chicken stock garlic amd seasonings to make and.alfredo style sauce which I'll serve with tagliatelle.

We also do curry and rice, fajitas,.enchiladas, chicken fried rice, sweet & sour, Spanish one pan chicken and rice, hunters chicken etc....

I don't buy breasts ( too expensive ) I cook a whole chicken and use the cooked leg heat for curry's and fajitas etc.

If I had a breast therefore I'd bash it out and do cheese and breadcrumbs and call it an escalope. Or slit along the middle and put cheese and broccoli ( or whatever ) in the middle. Like a Kiev.

They were 4 for £16 at the butchers, not too bad I don’t think.

We do often use a whole chicken but he picked these up the other day with a view to do them wrapped in Parma ham when the other dc was home from uni but we never got round to it in the end and now she’s gone back!

Stuff with garlic butter or cheese and wrap in bacon/parma ham.

My family love home made chicken goujons.

We use a lot of chicken breasts in our house, I buy the big packs of about 8, and freeze whatever I don't use straight away.

@Garman 4 chicken breasts for £16.

@Hellocatshome dh and I are going to finish last nights leftovers, the dc still need to eat so I’ll cook the chicken for them and take the leftovers to work tomorrow. We all have plans tomorrow evening so no one is home for dinner and the chicken needs cooking soon really.
They’re now marinading in some kind of mixture I’ve made up but in an Alfredo they would also have been nice and @GeniusLevelJaffaCake that looks lovely!

We're having chicken breast this evening- marinated in greek yogurt and spices, then skewered into kebabs and baked in a really hot oven. Having them with yog/cucumber/mint, salad and pitta breads.

But I definitely didn't pay £16 for 4 chicken breasts - I wouldn't pay anything close to that - although I guess mine aren't as good quality

Or you can flatten it with a mallet and add some currants to make a really very surprisingly convincing Boris Johnson facemask - I have done this loads of times.

I'd chop them up and cook. Add a pot of creme fresh, a blob of blue cheese and a handful of peas and simmer very slowly. Then pour over tagliatelle. If you have them also add bacon lardons.

I made some kebabs tonight. Marinaded for an hour or so in a mixture of condiments and herbs. Grilled and served with couscous and sweetcorn on the cob.
Lots leftover for lunches.

I was just musing as to what other people cook with them as I always do fairly similar things as I don’t really do much cooking myself, dh usually does it but he was poorly tonight so I fell back on the staple of fajitas.

I’m happy with the cost of the chicken breasts, I think they’re usually £20 for a pack of 4 but these were on a deal at the butchers. Don’t know exactly though, it’s usually dh that does the meat shop! No idea what they weigh. There were 2 adult (dc but adult) and one teen boy eating them. There’s enough leftover for my lunch tomorrow.

Everyone was happy but we are going to attempt making kievs next week.

I like chicken skewers with peppers marinated in bbq or soy sauce and grilled on the foreman
