What to make with chicken breasts

For dinner for the dc?
Dh and I are on leftovers, dh isn’t very well but he usually cooks.
I think I’ll do fajitas, what would you make with chicken breasts? I’d actually get them a takeaway because I hate cooking but they need using up so I’ll bite the bullet!

We get all our meat from a nice butcher but we don’t pay anywhere near that amount.

Our new fave chicken breast recipe is

Chicken breasts with lemon
½ cup flour for dredging
Salt and freshly ground pepper to taste
4 skinless boneless chicken breasts
2 tablespoons olive oil
4 sprigs fresh thyme or 1 teaspoon dried
2 tablespoons finely chopped shallots
2 teaspoons finely chopped garlic
2 teaspoons grated lemon zest
3 tablespoons lemon juice
½ cup chicken stock
2 tablespoons butter

Step 1
Season flour with salt and pepper, and dredge the chicken all over. Remove the excess flour.
Step 2
Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
Step 3
Flip the chicken and cook for 5 minutes more, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.
Step 4
Add the thyme, shallots and garlic, and cook for about a minute. Do not burn the garlic. Add the lemon rind, the lemon juice and the broth.
Step 5
Scrape the skillet to dissolve the brown particles that cling to the bottom. Add the butter, and cook for 3 minutes longer. Serve immediately.

It’s very very tasty and beloved by all that try it. We have it with mashed potatoes and green beans.

I'm still stuck at £16 for four chicken breasts. Can't quite move past that!

@RefreshingCandour that sounds like something we’d all eat, will add that to a list!

@scaredofff i don’t really care how much it costs! It’s really good quality meat, excellent butchery, high welfare and all as local as it can be. I don’t really do the cooking, he goes to the butchers and buys what looks good and then cook on the day based around what we’ve got.

@Aydel what’s groundnut stew?!

I used aubergine and courgette instead of squash and didn't have pine nuts hence the pistatios but it worked well!

I didn't see OP asking for an opinion on the price. If they can afford to shop like this, good for them. There'll be twice as much meat on these than most supermarket chicken breasts anyway.

I bought chicken breasts from Lidl once and never will again. I'm on a budget but I'd rather buy decent quality meat once a month.
