What’s for dinner?

I am so excited about my dinner which sounds really silly 😝 but we are having tofu marinated in teriyaki sauce; potato salad; cannellini bean and spinach salad and lemon green salad. I was watching a newish Netflix series called blue zones and it encouraged me to get out of my cooking rut. Plus I love tofu. I’d forgotten how much.

Baja fish tacos from simply cook. We added some Mexican rice and a caeser salad to bulk it out.

I made char Sui pork, veg stir fried with plum & hoisin sauce and rice (cooked properly with the absorption method after learning how to by recipe tin eats). It was delicious though the pork was a bit dry as it was thin shoulder steaks.

DS and I had mapo tofu and aubergine as it’s all the stuff DD hates and she’s on a sleepover! First time I’ve made it and it was bloody delicious

I made tapas type dishes. A tortilla, made with courgettes rather than potatoes, patatas bravas, chorizo sausages, padron peppers and some mushrooms fried with a bit of garlic, chillis and finished with sherry vinegar. I quite like this on a Saturday evening, as it makes for quite a relaxed meal, and there’s usually leftovers for people to grab for their lunch tomorrow (we have our main meal in the evening).

Airport food. I'm waiting to fly home from two weeks away and although I don't want to leave, I can't wait to get home to my favourite meals.

Just DH and I tonight so we had a platter of cheeses, including the fabulous Blacksticks Blue, cold meat, salami, some mackerel we caught last week in a white wine and mustard sauce, yellow tomatoes from the garden and a loaf of sun dried tomato and jalapeño sourdough. Following by self-saucing chocolate fudge pudding with clotted cream ice cream. We've been eating a lot of boring soup and pasta lately so it was a proper treat 😊

Dc have both had pot noodles and angel delight.

Dh and I had sourdough cheese toasties and wine.

Normally we eat more healthily!

Trying to up the plant points and we were out for dinner last night, so warm salad of roasted butternut squash and onion in harissa with almonds, spelt, massaged kale, spinach, and yoghurt harissa dressing. Dried cranberries and parsley on top

Everything I make these days has 25 ingredients.

Oh I love the sound of this.

Today Dcs are having gammon and chips and salad. Not sure for me yet. I have alot of pineapple to use up so might do baked sweet potato with a pineapple salsa and then greens on the side of some sort.

Ooh pineapple salsa sounds great with gammon.

This whole shebang seems to be about having different fruit and veg in the house plus tinned pulses, and nuts and seeds in the cupboard, to add on top. Also a spoon on kimchi going on lots of things.

I certainly need to dramatically increase my fruit and veg intake. I tend to easily get 9-10 serves a day- but it's always all the same things.

This morning I have made a broccoli, pea onion and pesto soup basically for snacking on. I don't really do well with breakfast so i sometimes have a cup of homemade soup instead.

Dinner tonight- not sure.... DCs are advocating for takeaway as school starts again tomorrow. DH is vegetarian so maybe we will get a full Indian vegetarian feast with the view to putting leftovers in the freezer.

Would anyone be interested in a thread about trying to massively up 'plant points' as @Whataretheodds calls it? I'd probably have to move it over to the food section rather than chat.

I'd be up for a upping plants points thread @TheFutureMrsWolowitz ! . I'm slowly trying to add in extra fruit and veg, every little helps eg fruit with cereal/ porridge. An extra portion of veg at dinner etc.

Today...
Breakfast Weetabix with blueberries
Lunch Tuna and sweetcorn quesadillas. Apple
Dinner gammon egg and chips so no veg oops 😂

Maybe not the best day to start 😂
