What’s for dinner?

I am so excited about my dinner which sounds really silly 😝 but we are having tofu marinated in teriyaki sauce; potato salad; cannellini bean and spinach salad and lemon green salad. I was watching a newish Netflix series called blue zones and it encouraged me to get out of my cooking rut. Plus I love tofu. I’d forgotten how much.

Chicken bacon with linguine

We're making pizzas. I made the dough last week so have taken it out of the freezer to defrost. I have sliced courgettes frying in a pan with olive oil and an obscene amount of salt in preparation. My pizza will be courgette, mozzarella, goats cheese, basil and chilli honey. My DH is having salami in place of the courgette for his.

We're having spaghetti bolognaise. DH made the bolognaise 2 days ago and bunged it in the fridge so it'll be super delicious. I just need to cook the spaghetti and warm up some rosemary focaccia.

Strawberries, meringue and cream for afters.

I’ve got some turkey steaks out the freezer and some basmati rice. I’ve not decided what is going to be the flavouring. It’ll probably end up Chinese flavoured.

Just back in from a day at the zoo, kids had a cheeky happy meal on the way home (last hurrah of the school holidays)

I'm debating between a chicken shish from the Turkish restaurant round the corner or a Pad Thai.

We are having an easy to make paella. Just prawns and chorizo.

Trying to up the plant points and we were out for dinner last night, so warm salad of roasted butternut squash and onion in harissa with almonds, spelt, massaged kale, spinach, and yoghurt harissa dressing. Dried cranberries and parsley on top

Everything I make these days has 25 ingredients.

Lazy dinner for us! Fish fingers, chips and corn on cob/peas. DH’s choice!

My favourite tonight. Costco salt and chilli belly pork marinated in gochujang, mirin, soy, ginger and garlic, in the oven.
With stir fry pak Choi, spring onions, baby corns and udon noodles in a teriyaki sauce.

Dd has had pizza and salad she’s just gone to work

I’ve felt under the weather today so having minestrone soup and crusty bread

I love these threads for inspiration! I actually found one of my now favourite recipes from one of these threads. We're having a cod curry with rice and naan. DH is cooking while I put the toddler down (not very successfully, atm). Also got some salted caramel cheesecake for dessert.

I've just cooked a gusto, peanut chicken, greens and wraps baked in the oven and a sweet chilli dip.

We had chicken thighs on the BBQ with roasted crushed new potatoes, kale crisps and a green salad.

A southern fried chicken fillet and home made chips 😀
