Your absolute quickest, least faffy tea recipes

We have an extremely busy week coming up, unusual for us! We're both working 12 hour days and I'm just doing the Tesco order.

Any ideas for very quick, no faff, little prep dinners? Happy to buy prepared stuff. Already got a couple of oven pizzas on the order!

Pasta Carbonara or Punttanesca. Or I do a mushroom and bacon in a cream sauce with microwave rice.

Fry off pancetta pieces with some garlic. Cook fresh pasta with peas for 4 mins. Add 1/2 tub of creme fraiche. Add in the pasta/peas. Stir together.

Gently heat smoked salmon/hot smoked salmon/ cooked prawns/ cooked chicken/cooked quorn pieces with garlic. Cook fresh pasta and peas for 4 mins. Add 1/2 tub of creme fraiche to the protein. Throw in pasta and stir.

Or do fresh pasta with any of the above and pesto.

I often chuck in spinach, or jarred things like peppers, sundried tomatoes, artichokes etc.

You can swap creme francie for philidelphia if you like it creamier. Then you can use flavoured ones like sweet chilli too.

Black bean fajitas. If you're really pushed for time, buy frozen peppers and onions, throw them in with some tinned black beans, paprika and cumin til they're cooked. Serve in wraps, with salad if you can be bothered. Takes less than 15 mins when I do it (using fresh veg)

Fried egg sandwiches with smoked paprika and sweet chilli sauce.

Not that balanced, but really good. Throw in some fried halloumi and a sliced avocado and it's both balanced and delicious!

I try not to spend more than half an hour cooking.

Meatballs and Spaghetti
stir fry & noodles
pizza
jacket potatoes (frozen ones)
Chicken salad or kebabs
fry up
sausage's and mash (pre made mash)

Also partial to a ‘Charlie Bingham’ ready meal (chicken tikka or Mac and cheese).

Smoked salmon, eggs on toast - 5 mins
Tortellini, peas, broccoli, sour cream - 7 mins
Sea bass, garden salad, rice - 15 mins
Prawns, couchettes, pasta, ready made sauce you like - 15 mins
Chicken fajitas (+ chopped lettuce, cucumbers, bell peppers, tinned corn etc) - 15 mins
Stir fry (chicken or prawn), any vegetables - 10-15 mins

This is very lazy but I love it!
Clonakilty pudding sliced and cooked for 3 mins on George Foreman and the premade beetroot salads all the supermarkets do.

My quick dinner is gnocchi and prawns. Both only take 3-4 mins on the hob. Throw in some chopped tomatoes, stock, rocket, chop some peppers and onion, or even a ready made sauce if you prefer... then maybe a few slices of frozen garlic bread in the oven or air fryer and you have a really lovely meal that doesn't take long at all.

I freeze all one pot leftovers.

last night we had dirty fries.

Frozen chips done in the air fryer, left over chilli on top, grated cheese and jalapeños then back in the air fryer to brown.

25 mins cooking time start to finish, effort to throw it together one minute.

cheese omelette made with extra large eggs and extra mature cheese, sliced not grated. Served with prepared salad

steak & salad with cous cous

smoked haddock ( cooked in microwave)with tender stem broccoli & poached egg

Bake cod fillets (without any coating) at 205 *C - put on foil on tray, drizzle with olive oil, lemon juice, salt and cayenne.
10-12 mins
Serve with a Mexican Rice (or similar) and peas

Chicken curry. Fry chicken breast, coat with turmeric, add enough boiling water to cover chicken, curry powder, tomato purée and let it cook for 20 mins. Delish 🤤

We love lamb kofta (if you can get them pre made, or just some kind of meat kebab sticks), chips and mix natural yoghurt with jarred mint sauce to dip/drizzle over once cooked. Plus some peas on the side. Really tasty and quick but feels a bit more special!

If I have limited after after work I make:
-Halloumi burgers (brioche burger buns, fry thick slices of halloumi, spread the bun with hummus or mayonnaise, serve with salad from a bag. Obviously can also do chicken or beef burgers)
-Jacket potatoes and salad (served with prawn mayonnaise or cheese. I usually cook them the night before so they just need reheating)
-Ready made pizza (I jazz it up with nice toppings. We like smoked salmon, olives and mascarpone).
