Best substitute for peppers

What are you all using instead of peppers. I want to make a curry and usually put peppers in. Would green beans work?

What is it you want to replicate? Taste/flavour? Colour? Texture?
Green beans are fine to add to a curry. They have colour and a bit of gentle crunch.

Just about any veg would do (possibly not kale... ) -- courgettes, mushrooms, beans, tinned chick peas or kidney beans, lentils. It wont be the same obviously but they are all valid ingredients to add to a curry.

get your peppers from small independent greengrocers.

there isn't actually a shortage, it's just that the supermarkets are refusing to pay the full costs of growing and importing them. independent greengrocers - so long as they are located where there is sufficient local demand at the naturally slightly higher price.

In a curry anything goes, maybe another nightshade like courgette. But I get mine frozen so always have a massive bag for things like curry and paella.

We do beans. I really hate mushy food so lots of things like mushrooms, courgettes, squash are out.

I know, technically not a vegetable, but potatoes go well.

DH likes these mini-baby corn ones. If you do a Thai curry, you can add water chesnuts (in tins).

I can’t eat peppers so I always substitute with another veg. Anything you have or can buy and add some chilli, either fresh if available or dried.

Cauliflower works well with curry.
