Best substitute for peppers

What are you all using instead of peppers. I want to make a curry and usually put peppers in. Would green beans work?

Green beans would be perfect. Seeded, peeled fresh tomatoes are good substitute for red peppers if added near the end.
Peeled broccoli stem is wonderful.
Even an aging cucumber can be peeled, chopped and thrown in

A mushroom is not technically a vegetable but its also not an animal so you can class it as vegetarian, no need to be over pedantic.

I've never thought of putting salad in.

I could chuck some spinach in.

sweetcorn & peas would work though I love jarred peppers if you can grab them if no fresh ones are available

There’s some daft nugget of knowledge that we share something like 90% of our dna structure with a banana so I wouldn’t focus too much on that Grin

If you struggle again, you could see if you can get some pepper in a jar, although they are soft and not crunchy. Frozen peppers are not quite as soft.

Baby sweetcorn is something else which could be used.

I've seen more beans and carrot in a takeaway or restaurant curry than I have broccoli.
