What vegetables do you use with pasta?

Looking for ideas that teenage dc might like.

I just realised that they haven’t had any fruit or veg today apart from cucumber. I have fresh fettuccini in the fridge so something to go with that.

Anything like peppers, onions, mushrooms, courgette, celery, grated or finely diced carrot added to tomatoes sauce. Peas, brocolli or spinach in a white or cheese sauce. or I’ll often have a side salad or brocolli on the side if there’s not much veg in my pasta sauce.

peas, tomatoes, onion, peppers, courgette, mushrooms, sweetcorn, spinach, baby corn, broccoli, cauliflower. Even root veg make an appearance

All sorts in pasta, to be honest. I have a 7 and 3 year old and use loads of hidden veg in pasta sauce.

For instance, mac and cheese has: onion, broccoli, courgette, cauliflower, which i cook and blitz with the cheesy sauce. I then sprinkle peas and sweetcorn on the top as I know they’ll eat that. Have been known to add sweet potato to the mix too.

Again, anything cooked which can be blitzed and added to a sauce. I am clearly not a purist! 😂

I love a little carrot salad in a chicken wrap or on a burger. Just shredded lettuce, grated carrot, bit of lemon zest and juice, olive oil and salt and pepper. So much nicer than plain lettuce.

Onion, mushrooms, celery and carrot chopped fine and sauteed. Add a tin of green lentils, chopped toms and passata; and green herbs. Then loads of cheese obviously!

Great suggestions! I would normally use broccoli, onions and peas with everything but I could try courgettes. I’ve also got carrots, cauli and sweetcorn. I’ve never tried fettuccini alla carota!

If you peel a courgette into ribbons using a potato-peeler its really nice with any kind of long flat pasta.

Try roasting cauliflower florets in some olive oil till a bit charred on the edges and mixing into pasta with a creamy sauce

With a tomato sauce: carrots, peas, sweetcorn, green beans, courgette, broccoli, cauli. Sometimes Peppers, mushroom,onion (or various combinations of these)

With tomato, garlic and balsamic vinegar sauce: aubergine, butternut squash, baby corn, courgette, mushroom mange-tout,onion. black beans

With tomato and herb sauce:
Carrot, onion, mushroom, sweetcorn red lentils.

With a white sauce:
Green beans, broccoli, cauli, courgette, mushroom, spring onions, red onions, peas, sweetcorn, mange-tout butterbeans or canellini beans

(Also not a purist but get as much veg as possible in a reluctant child plus a child who needs about 15 portions a day to function without meds)

I love carrots but carrots just seem wrong in pasta. I'd use tomatoes, onions, peppers, sweetcorn, mushrooms, courgettes. Spinach.
Roasted Butternut squash seems to work.
I wouldn't have them in pasta but parsnip crisps work really well on top of it.
I'm not a fan of peas in pasta either come to think of it.

We always pulse carrots (& peppers) up to put in pasta sauce and curries, it gives a lovely thicker texture, adds fibre & fussy kids can’t taste it.

I keep frozen chopped peppers and frozen onions in the freezer. Fry them off, add garlic purée, herbs, pinch chilli flakes, salt , pepper and a teaspoon of sugar. Add a tin of tomatoes. Goes with chicken or ham or sausages and pasta of course

I really like broccoli with pasta. I make one with chopped broccoli, anchovies, garlic and chillies.

Roasted Mediterranean veg or i make an aubergine pesto, also like courgette slices sprinkled with oil and sage then fried in my griddle pan and served on the pasta.

I half baby plum tomatoes or whatever tomatoes I have in and put them on top.

I also add mushrooms
