What vegetables do you use with pasta?

Looking for ideas that teenage dc might like.

I just realised that they haven’t had any fruit or veg today apart from cucumber. I have fresh fettuccini in the fridge so something to go with that.

Mediterranean roast veg usually - courgettes, tomatoes, peppers, onions, with mozzarella

Or just courgettes, sometimes with feta

Mushrooms and Broccoli with ham in a cream sauce

Or pasta peas and salmon with crème Fraiche and lots of salt and pepper is good

I grill courgettes, cherry tomatoes and sometimes mushrooms with chilli, olive oil, oregano, salt and pepper, then have spinach in frying pan with chorizo and garlic. Add grilled veg, add some pasta water, add pasta. It's really tasty.

You can also make great Cavolo Nero / kale pesto. Lots of green leafy veg can be used to make pasta sauces.

Courgettes are good with pasta too. This is an amazing dish: food52.com/recipes/36700-spaghetti-alla-nerano-spaghetti-with-zucchini/amp

Mushroom, tomatoes, butternut squash, eggplants (look up pasta Alla Norma), green beans, artichokes, asparagus…

There are no veg I particularly do or don't put with pasta, but I tend to have them in set groups
Carrot and celery would be nice, chopped finely and in a Bolognese
For creamy pasta I only ever use green vegetables, with the exception of red onion which I find works really well in a creamy sauce. Or mushrooms, but not at the same time as red onion.
Tomato sauce I would add peppers, courgette, aubergine, mushrooms.

I often serve steamed veg or salad on the side with pasta though, helps keep the veg eating up and the carb eating down. Otherwise I fill up on pasta and don't get my veg in for the day

Depends what sauce!! Peas, broccoli, leeks, peppers, tomatoes, artichoke, mushrooms, spinach...

To make it palatable for young kids, I'd cook onions, peppers, grated courgettes and carrot with passata or chopped tomatoes then blitz to a smoother sauce. Then pasta bake with tuna and sweetcorn and cheese on top

Oh misread teens for toddlers, forget my hidden veg idea! Though still a good way to get a flavoursome tomato base with a mix of nutrients. I love broccoli with pasta, or a load of roasted veg- tomatoes, peppers, onions, courgettes, aubergine

I sauté courgettes for quite a long time in olive oil and garlic and then put in a bit of butter and lemon zest. It's amazing with pasta and parmesan on top. I do similar with cherry tomatoes, but I don't like mixing the two for some reason.

Broad beans, crème fraiche and ham or bacon, whatever fresh herbs are knocking about in the fridge.
I also make a cold pasta salad with broad beans and feta. Broad beans are amazing, I buy them in tins to save the faff.
