What recipes should I make with my shiny new mandoline?

I've just received a Bron coucke mandoline for Christmas. Can anyone recommend any recipes to make with it?

Oh Lord- get someone on standby with bandages and a car to take you to A&E.

I'm not allowed to use the mandolin any more, and wince when I see them using it on Masterchef....

So does my DH! I have to tell him when the mandoline close up is over. He took the end of his thumb off when making onion bhajjis.

Now you have been properly warned about the risk to the end of your fingers, I'd go with the mooli (really good) or any veg picked, the fine slicing really takes the concept up a notch. Dolphin based potato dishes are nicest with really fine potatoes.

How does anyone damage themselves with an avocado? If it is ripe the stone will come out with a teaspoon.

The worst thing is that after I sliced my hand using the mandolin my husband banned me from using it again. "Let me do it" he said in a v patronising tone "you need to be VERY careful with these". Before he'd got through the first potato I was clamping a tea towel around his hand to staunch the blood. I deserve some sort of prize for not howling with laughter.

My mandoline dishes tend to come with a side serving of blood too.

When I can avoid lacerating myself, I most like making courgette parmigiana. So much nicer than with aubergine. Also useful for potato tortilla as you can get the potato slices thin and uniform.

Also courgette 'crisps'.

I used to work in a homeless shelter and had to shake out bedding for needles and pipes. I treat my mandolin with the same respect and care.
