Massive salad help

Can any of you lovely people. Please share with me your salad and fruit salad dishes?

I was away last week and we were out constantly for lunch/dinner and the blood in my veins has been replaced with prosecco. I feel all bloated and just want to eat light refreshing food.

Also if you have a lovely dressing recipe. I will be forever grateful 😁

I haven’t got a recipe as such but I love adding a few croutons on top of salad. I like little gem lettuces, good vine tomatoes, olives.

I make a big salad and throw everything in it. I put rocket, feta cheese in cubes, halved cherry tomatoes, sliced avocado, sliced cherry tomatoes, cashew nuts and roasted sweet potatoes then add chicken on the top. Sometimes I add raspberries and blueberries as well, not many, just a few. I just have it with balsamic vinegar as I don't know any recipes for good dressings.

I had something similar in a café in Liverpool and just looked at the recipe online. They did it with roasted figs as well, but those are hard to come by sometimes.

Most salad things are a bit tasteless at the moment. Watery avocado and hard tomatoes.

I like feta grapes and olives with an oil vinegar honey and garlic dressing.

This sounds amazing, especially the roasted sweet potatoes, what a good idea.

Jamie Oliver does a great range of jam jar dressing but my favourite is a classic French - all quantities are approximate but put in a jam jar, secure lid then shake like mad

Mustard - I like Dijon - approx 1 tsp
Olive oil - approx 3 inches up the jar
Vinegar - I use white wine - approx 1 inch on top
Salt and pepper

A good variation is whole grain mustard and red wine vinegar.

My favourite salads are all based on a bed of leaves, cucumber, toms, peppers and whatever else out of celery, sugar snap peas, radish, ribbons of courgette

Halloumi and roasted veg
Feta and mint with squeeze of lemon
Tuna Nicoise with egg and green beans
Hot smoked salmon
Chicken bacon Caesar
Chicken avo bacon / egg
Egg and ham

I also love homemade coleslaw with shredded cabbage (white and red), grated carrot, thinly sliced celery and a bit of apple

Tomatoes, onion, cucumber, feta, lime and olive oil dressing for a salsa style salad.

Tuna nicoise is a good one.
Normal salad - lettuce, cucumber, tomatoes. Then add steamed green beans, steamed new potatoes, boiled egg, balsamic vinegar.
Tuna steak or tinned tuna on top.
Serve with freshly baked bread and butter. 👍

I have a brilliant Anna Jones book that has a 'formula' for salads, which means I can usually make a good salad out of whatever I have in the house at a time.

Beetroot, feta or goats cheese, rocket, walnut. Balsamic and olive oil dressing

Chicory, blue cheese, walnuts. Honey and grain mustard dressing

Chickpeas, red onion, feta, parsley plus whatever you have out of: cucumber, radish, red pepper, cherry tomatoes, avocado, celery. Lemon juice and oil dressing

Apples, grapes, celery, walnuts, chicken. Half mayo half yoghurt dressing (touch of mustard).

Green salad with a selection from: bacon bits, cold new potatoes, croutons, cheese, nuts, hard boiled egg

If anyone has a good Asian slaw type salad recipe I would like it pretty please.

Agree with some PP that a lot of classic salas ingredients like Toms etc are out of season and therefore yuck at the moment.

I'm enjoying Endive (chicory) Pear Walnut & Goat's Cheese/Blue cheese type salads at the mo, and citrus is just coming into season. Clementines & endive is also so good. And pomegranate. Spiced Roasted Cauliflower with tahini dressing and pomegranate seeds is always good. With lots of sliced onions, fresh mint & parsley
