Massive salad help

Can any of you lovely people. Please share with me your salad and fruit salad dishes?

I was away last week and we were out constantly for lunch/dinner and the blood in my veins has been replaced with prosecco. I feel all bloated and just want to eat light refreshing food.

Also if you have a lovely dressing recipe. I will be forever grateful 😁

For a dressing use 1 part lemon juice to 3 parts extra virgin olive oil plus season with salt and pepper.

I do mixed leaves, cucumber in chunks, baby beetroot's in juniper, carrot ribbons, with goats cheese

I just toss whatever is in the fridge and add a vinaigrette as a dressing.

For my vinaigrette I use olive oil, mustard, balsamic vinegar, a bit of salt and pepper.

My standard vinaigrette dressing:

2 teaspoons medium strong mustard, slightly less if Dijon mustard
2 tablespoons orange juice
2.5 tablespoons olive oil
1.5 tablespoons walnut oil
1 tablespoon sherry vinegar

Salt pepper and a little sugar to taste.

I usually make ten portions at once and keep them in a couple of glass jars. The unusual vinegar to oil ratio is bc sherry vinegar is quite intense and also, the OJ provides extra acidity.

A small helping of cooked salmon, olives, tomatoes, apple and walnut salad (M&S), coleslaw and a slice of goat's cheese. My usual lunch.

My basic salad 'base' is always the same...mixed salad (usually bistro salad with shredded beetroot), cucumber, tomatoes, red pepper, radish and avocado. I sometimes add pine nuts and/or pumpkin seeds. Then I vary the toppings. Favourites are...
Halloumi and grilled pepper
Goats cheese and roasted butternut squash
Mozzarella, roasted butternut squash and pesto drizzled on top
Hummus, falafel, pomegranate and pitta bread croutons
Chicken and bacon
Or a good old Greek salad.

Quinoa base then scrunch raw curly kale in a dressing of olive oil, Sherry vinegar, mashed garlic, salt, Chuck in with the quinoa and add some other salad stuff and goats cheese.
used this recipe but tweaked a bit. I think with the standard base of quinoa and scrunched kale in a dressing of some sort it will be delicious - I had mint so used that but based it on this recipe (below) after a week of all inclusive eating and drinking last week 😂
the recipe says to use farro but I didn’t have that so used quinoa instead, fucking banging and am going to make up another batch for lunches next week.

Blue cheese, crispy bacon and walnuts with lettuce, cucumber, red onion and vine tomatoes. Olive oil and vinegar dressing but - if I'm low carbing - mayonnaise is good too.

For a PP who wanted an Asian dressing, try nam prik
Lime juice + fish sauce + shredded red chili + palm sugar (+ optional sesame oil) I use it on blanched/refreshed caulifflower florets, with sliced red onion, cucumber, sugar snaps, beansprouts and chopped coriander leaf.

Very finely sliced fennel, lightly salted and tossed in lemon juice, then a sprinkle of nice olive oil. Good with Italian dishes.

@minipie the Asian dressing ^^ is for you... it works on slaws too. DS makes another with soy sauce, sugar, ponzu and sesame oil.

I tend to think of it in different parts

Base - usually spinach leaves for me but any leaf will do.

The "bulk" - I roast butternut squash with salt, pepper, paprika and chili flakes, half way through add chick peas. Or sometimes roast broccoli or cauliflower same way

Or I do grains such a quinoa or bulgar wheat

The fresh element - cucumber, salted tomatoes, olives, green pepper, spring onions, radishes, avocado etc

Topping - I like to crumble feta and oregano on top, and I usually do good Greek yoghurt or lebneh as the dressing rather than oil

I love salads!

Puy lentils (in pouch), mackerel in olive oil, new potatoes (tinned), mixed leaves, goats cheese, sliced grilled peppers (jarred), handful of nice fresh tomato, cucumber and celery. Handful of fresh basil and dressed with olive oil and balsamic vinegar. Big pasta bowl.
