What shall we have for dinner on Thursday?

Ok wise women of MN - I'm doing our meal plan for the week. So far it looks like this:

Mon: Mexican fish and rice
Tues: Korean style chicken
Wed: Beef stroganoff pasta bake
Thurs:
Fri: Chicken chilli chowder
Sat: Bbq ribs and wedges
Sun: roast

We're drawing a blank for Thursday. Two adults and two teens. No mad dislikes (DS: - salmon, tomatoes and Dd: onion mushroom and tomato).

Any ideas??

I would love to! If it were just dh and I meat would probably only feature a couple of times a week. However the dc are big meat eaters and not very veggie friendly.

At the moment (whilst they are teens) we feel it's more important to eat a family meal together. Once they're at uni then our diet can change.

May do something baked potato based...

I make extra on Sunday and fry it together in a pan on a Monday evening. Then move your other meals down to cover Thursday. I work Monday and Tues so tend to do that on a Monday then a quick spag bol on a tuesday

Definitely something veggie and tell them kids to get over it! Eg veggie burgers/curry/jacket potatoes with veggie fillings/cooked breakfast (without the meat)/veggie hot dogs/pizza

Vegetarian meals my teens will tolerate are:

  • mixed bean burritos
  • chickpea and cauliflower curry with rice and naan
  • falafel wraps with roast veg couscous
  • beanburgers with wedges

If you really can't get a veggie meal into them, then sausage and mash!
