Cheese on toast

I made cheese on toast today and it was a let down.
Anybody any hints to make it tastier.

Eye level gas grills absolutely the best.

i still reminisce about my dads old oven with eye level grill - it really was the best for cheese on toast. Sigh.

I lightly toast bread, use strong cheese and lots of it. I don’t bother with sauces but I do like it very well done so it’s almost caramelised - you have to hold your nerve as the bread will burn (just cut the crusts off afterwards).

One thing that I tried when living in Newcastle-upon -Tyne was cheese on toast with a layer of mashed potato under the cheese. My sons love this now !

Thin kayer of mustard before you add the cheese and then sprinkle with lots and lots of pepper once the cheese has melted. Perfection.

Were you in the correct mood for this meal? I'm only half joking. Last year I made an amazing grilled chesse. It was the best grilled cheese I'd ever had. Afterwards I kept thinking how great it was, so two days later I made exactly the same grilled cheese. It was ok, but since it wasn't amazing I was disappointed. I put it down to mood. The first grilled cheese came after a wonderful long walk and nice chat with a good friend in perfect weather. So, were you in the right mood for this cheese on toast?

Toast in toaster, turn grill on high.
Grate mature cheddar and red Leicester.
Toast pops out of toaster.
Butter toast
Spread Cheeses evenly, 1cm thick all over.
Put under hot grill.
Once melted and slightly browning, take out.
Thin squirts of BBq sauce in an s.
Eat.
Belch.
Scratch bum.

Repeat till full.

I like putting tomato relish under the cheese before toasting. Maybe experiment with different sauces and cheeses until you find the combination you like.

I'm mega lazy, so use mature cheddar slices and a dusting of Knorr Aromat before grilling. I prefer lemon pepper, but Schwartz discontinued that.

I ate the best cheese toastie ever at a cider festival and they told me how they made it. Made it myself and hell it was amazing.

Yes I know a cheese toastie is demofferemt to cheese ON toast but here goes.

Thinly sliced sourdough: two
Scrape garlic clove lightly on both sides
Butter both sides of both bits of bread thickly ... Very thickly
Both bits of bread in hot frying pan and fry one side until golden
Flip
In a bowl mix grated strong cheddar and Cheshire or Wensleydale. Mix with spring onion and a dab of mustard
Pop thick cheese mix on one side of bread and put the other on top. Fry one side pressing down with a fish slice
Flip and press again until both sides are golden and cheese is melted. Add more butter to pan if necessary and don't worry if cheese escapes. It goes all golden and crunchy

Fecking amazing.

Our grill is eye level but its in an oven so I don't see how it would function differently if it was waist level or any other level.

Very lightly toast one side of the bread. Properly toast the other. Spread lightly toasted side with marmite and then cover in grated cheddar. Grill until the cheese is brown and bubbly. Cut off the crusts. There are some other good combinations - pesto and grated mozzarella (the hard type not the pizza cheese), camembert and caramelised onions...

When we say eye level grill, we're talking about gas grills from yesteryear which were extra fierce, with a proper grill area, not inside an oven.

Oh I used to make the grilled cheese in the frying pan with chilli.
My son loved it.
Gonna have to look up that recipe

Sourdough, toast on one side.

Thin layer of caramelised red onion chutney on the second side, top with good cheese (I like cheddar), brown in the grill.

Eat happily.

Strong cheddar, grated and mixed with Salad Cream. Toast bread on one side, turn and spread cheese on other. Grill on a medium heat until melted and bubbling. 😋

The best cheese toastie you will ever eat is a cheese sarny toasted in butter on both sides in a frying pan. Add a tiny bit of oil to stop the butter burning. I use mature cheddar but honestly I do not think it matters about the cheese. It is fab and my mouth is watering now at the very thought of it
That sounds good, do you need much butter in your pan or is it just enough to stop the bread sticking?
