What's tasty that I can make with chicken breasts? (Not curry)

Warning - this is a very random and extremely trivial question but... what can I make with chicken breasts that is really tasty but not curry? We've had curry already this week and I'm trying to use things up rather than order Deliveroo even though I'm tempted

Impossible to answer without knowing what else you have in your fridge/cupboards!

But three suggestions:

  • sort-of Spanish chicken - onions, chorizo, black olives, garlic and tin of tomatoes, served with rice
  • creamy mushroom sauce, over pasta
  • stuffed with cheese/herbs and wrapped in proscuitto/parma ham/pancetta

We're having 'flat chicken'. So chicken breasts bashed flat and cooked is a griddle pan finished With flavoured butter. Plus new potatoes, beans and tender stem broccoli

Make a marinade, stick the chicken in it for as long as you’ve got, then stir fry with some veg and serve over rice/noodles/roasted sweet potatoes?

Or grill, shred and add to a salad?

Make a laksa (a soup, not a curry, so not cheating)!

Dredge in seasoning, egg and a bit of flour and make fried chicken?

Make chicken and veg kabobs?

Slit a pocket in them and stuff with mozzarella, sliced tomato and balsamic glaze. Wrap in Parma ham. Serve with garlic greenbeans and dauphinoise pots.

Bash them flat, spread tomato purée on and chorizo sliced peppers /mushrooms/jalepenos (whatever you like) and mozzarella
Bake for 20 mins in hot oven

This is better with chicken thighs but works with breast.
Depending on how many people, chop roughly a couple peppers, slice up a courgette, quarter a couple red onions, throw in ten or so cherry tomatoes. Slightly crush bulbs from a garlic (use them all). Spread in baking dish. Then put a generous amount of olive oil, an equal amount of balsamic vinegar, a tablespoon of hot paprika, a tablespoon of smoked paprika (more of both if you like). Some salt. Toss.
On top lay your chicken breasts (skinned, but skin on if you want) and roast for about 50min. Serve with rice. This is a slightly adapted Jamie Oliver 'Hit 'n Run chicken.

Mixed into risotto (I like to fry them separately and then add into the risotto at the end so they don't overcook) or sliced and made into nuggets.

Slice through the middle lengthways, stuff with Boursin cheese, chopped onion and chopped mushroom. Wrap in bacon to hold it all together then wrap in foil and cook for 20-25 mins in the oven.

Loving these ideas.

my suggestion:
Hassleback them and stuff gaps with pesto, mozzarella and tomatoes. Bake. Serve with whatever salad or veg you have.

Quick Roast.
Put oil salt pepper on breasts and roast for 30 mins.
Boil pots and mash.

Open tin of peas and carrots and put on hob.

Boil kettle to make gravy.

Delicious and easy!

Hunters chicken,

Cook in oven for a bit, place bacon over the top, cook till bacon cooked.
Top with bbq sauce and sliced cheese, cook till cheese melted.

Serve with whatever sides you like.
We usually have chips, peas, salad.

Melted butter, honey and whole grain mustard poured over and cooked in the oven. Sounds simple bit tastes lovely (and people always ask for the recipe which is a bit embarrassing)
