What are you having for dinner?

I HATE cooking. Always have. I'm not very good at it and I don't eat well.
I think part of the reason I hate it is that because I go to the effort of cooking and the result is never that delicious so not worth the effort. And I'm very lazy.
I tried a pasta bake last week I was super excited about but it turned out rubbish.
Thankfully I have a job where I can eat at work most days.

But tonight I am not working. DH is out so I am eating by myself. I don't know what to cook and I don't particularly want a takeaway.

What are you having for dinner? Maybe it'll give me some ideas🥲

The pistachio, pea and mint noodles on this link. Haven’t tried it before, but I like all the of ingredients and I’m a huge Meera Sodha fan in general so I have high hopes.

Sausages in a creamy lentil sauce (BBC good food). I have one veggie dc so it’s a good dish that we can eat together but with substitute sausages for the veggie.

If it was me alone for the evening, I’d go for cheese and crisps with a glass of wine!

Another one who hates cooking here.

I’m having chickpea salad - chickpeas, tomatoes and cucumber with salt and olive oil. Might add some sweetcorn. Takes literally 3 minutes to drain chickpeas and cut up the rest.

We used to have it a lot in Spain where I’m from, although I only recommend making it with Spanish chickpeas that come from those big glass jars - buy in a specialty shop, or in Lidl during Latin week.

Don’t use tinned chickpeas. Boiling your own is a good plan B but that obviously takes longer.

Yay a dinner thread!

For me nothing because we had pizza for lunch and I have been unwell lately so one meal a day finishes me off.

The Dcs are getting veg sticks, hummus, taramasalata, salami slices, baguette and cheese because they had pizza, chips and chicken wings for lunch. If they are hungry after that then it will be toast and fruit for supper.

But I need to re-start my meal planning. The freezer is heaving so that will be lunches sorted and I expect some proper comfort food like chicken noodle soup will be on the agenda. I am taking inspiration from this thread!

I think tonight's dinner is going to be spiced salmon with pea, mint and broccoli mash and maybe some new potatoes. I saw it on the BBC good food website yesterday when I was looking for ideas.

What have you got in, or are you going shopping?

I'm making a curry tonight (I use the bbc easy chicken curry recipe which is pretty foolproof although I add extra chilli flakes as it's quite mild)

I'm on my own tonight and cannot be arsed to go to the shop or have take away (had it last night) so I am having chicken kiev, potato dauphinoise and peas as it's all i could find in the freezer.

Spaghetti and meatballs. Meatballs been in the slow cooker with a tin of tomatoes, herbs and garlic which were whizzed in the blender. Added a couple of bay leaves and some red wine before the tomatoes. So easy.

I make easy curry with the jars you get with spices on the lid. We like a jalfrazi made with red onion, aubergine, chickpeas and spinach. Makes enough for 4 and can be batched up and frozen. Have with pita bread or rice, and I make raita with greek yoghurt, cucumber and fresh mint.

Okay i have just written a meal plan for the next few days. It has to be easy meals for me because I am really tired right now.

I have;


  • chicken noodle soup. Just chunky chicken soup with little macaroni stars

  • roast gammon with roast potatos; brussel sprouts with butter and sweet corn - I will buy one of those ready to cook gammons from Aldi

  • spagetti bolognese

Lunches will be freezer surprise as I have alot to go through and use up.

But one of my favourite things when I really do not have the energy to cook is I go to M&S and buy a shove in tray of meat of some sort then with shove in trays of sides- red cabbage and creamed spinach are my favourites,

Takeout. Following for inspiration. If today's schedule hadn't been trashed by a toddler nap fail it would have been easy chicken satay with rice and cucumber. Hopefully the defrosted chicken will still be fine tomorrow.
