Getting a bit bored with my breakfast fare: cereal, porridge, chia porridge, Richmond vegan sausages with fried tomatoes and mushrooms, and... that's about it!

Any tasty suggestions? TIA🙂

Avocado on toast
Jam on toast
Peanut butter on toast
Grated tomato and olive oil on toast (this is a typical Spanish breakfast)
Vegan pancakes?

SummerLobelia · 12/08/2022 21:24

Good old tofu scramble! When DH was vegan (now lacto ovo veg) I used to make tofu scramble. Silken tofu with a tiny bit of tumeric, garlic powder and then fresh chopped chives and parsley on the top. Really lovely.

I am a savoury sort of person so the norms like avocado on toast etc do it for us. Plus I love making grilled portobello mushrooms with olive oild and herbs.

I also love a traditional Israeli breakfast of cucumbers, tomatoes, black olives, radishes and fresh breads. With loads of fresh herbs such as coriander and mint with lemon juice.

SummerLobelia · 12/08/2022 21:26

Plus jus roll puff is vegan (or at least it used to be). I would make puff pastry and jam rollups.

Ooh! (I am on a roll). I would also spread a wrap with almond butter (we have peanut allergies), sliced fresh pear and dates then fold them up.

AliceS1994 · 12/08/2022 21:30

Pret vegan frozen croissants from Tesco or the Jus rol kits (especially if you have small kids they love these), vegan banana pancakes, homemade muffins/granola/bars, big breakfast smoothies with oats in, Mary Mcartneys hash brown recipe!

Oh, thank you all, my mouth is watering!

Grated tomato and olive oil on toast (this is a typical Spanish breakfast)

I had something similar to this on holiday last week, but I'm a bit nervous about grating tomatoes .. sounds messy!

@SummerLobelia thanks for your amazing suggestions. I hadn't thought of scrambled tofu before... how do you cook it?

Yes, I do have soya yoghurt with stuff in sometimes, very nice.

I do overnight chia, but haven't done overnight oats before... I usually just porridge them! I'll give it a try.

SummerLobelia · 13/08/2022 06:43

That is a lovely blog @ToGanymedeAndTitan thanks for posting!

I could do with some more vegan recipes in my life so following this thread with enthusiasm!

Tofu scramble, just put the block in the pan and flake it up with a fork. Heat, add seasonings and you’re done. I mix chopped tomato in mine.

gotelltheoldmandowntheroad · 13/08/2022 08:19

We have pancakes most mornings. Make a batter either thick for American style or thin for crepe style.

Oats, half ripe banana, milk,

That's all you need but I often add

nuts
protein shake mix (can replace banana)
peanut (other nut/biscoff spread) butter (can replace banana)
chia/hemp/sunflower seeds

So they're very nutritious and set you up for the day.

I like garam flour omelettes too, that's just the flour and water and you can add in salt and things.

sashh · 13/08/2022 08:46

Things on toast - beans or mushrooms.

Freshly baked bread with nuts and or onion baked into it - my grandma used to make bread with cheese and onion.

You can make a pancake / omelet type thing with the water from tinned chick pea water.

Smoothie made with a mix of fresh and frozen fruit.

Hummus with pitta bread.

Bubble and squeak.

Potatoes - new potatoes cooked the day before and eaten cold.

If you look tot he east of the med, Turkish and Israeli breakfast is often sliced tomatoes, olives, pickles, cucumbers and stuffed vine leaves.

Fruit with some form of protein? So fruit and nuts.

Vegan nasi goreng.

Can you tell I don't like cereal?

Ooh! (I am on a roll). I would also spread a wrap with almond butter (we have peanut allergies), sliced fresh pear and dates then fold them up.

Sorry to hijack, but can I ask what almond butter you use that is suitable for people with a peanut allergy?

SummerLobelia · 13/08/2022 08:52

We use Meridian usually. The DS with a peanut allergy will not eat it, but we do not have any peanut products in the house at all due to his allergy and the concern about accidental cross contamination (knives, surfaces etc) so we have almond butter instead.
