Getting a bit bored with my breakfast fare: cereal, porridge, chia porridge, Richmond vegan sausages with fried tomatoes and mushrooms, and... that's about it!

Any tasty suggestions? TIA🙂

I am not vegan or even veggie but I am trying to cut down on my meat consumption and some of these sound really nice particular the israelian breakfast so thank you for starting this thread @ITriedToStopSwearingButICunt

Tinned tomatoes on toast with vegan sausages

I’m another fan of Dahl for breakfast in winter. I call it Himalayan porridge :)

ITriedToStopSwearingButICunt · 13/08/2022 09:39

Thank you all so much for your suggestions; some seriously tempting stuff there.
Thanks also for the recipe link, Ganymede.

Glad this thread has given others ideas, too.

If you look tot he east of the med, Turkish and Israeli breakfast is often sliced tomatoes, olives, pickles, cucumbers and stuffed vine leaves

Some lovely plant based food in that part of the world @sashh

By the way, anyone who’s struggled to give up butter should try Flora Plant B*tter. Had I not discovered this I may not have been able to be vegan: I love buttered toast so much!

Mmmmm. baked beans on toast.

It’s funny how we (or is it just me?) can forget some of the old basics, not appreciating that they were vegan all along!

Tomatoes and mushrooms on toast. Simple and delish.

sashh · 13/08/2022 10:24

I'm an omivore but when I was growing up the phrase, "they eat meat every day" was used to mean a family was quite well off.

I think we have seen more ultra processed food and not most people can afford to eat meat every day and some of the vegi things we used to have we don't think about today.

If you watch Shirley Valentine, "chips and egg" is mentioned a couple of times, it used to be a fairly common evening meal for me as was beans on toast.

Sorry I know that isn't vegan, I hope you do not mind that on a vegan thread.

OK back to breakfast idea.

Indian breads, puris, parathas, dohsas, on their own or with chutney. Paratha can be stuffed with veg.

My aunt is lactose intolerant, she make a batch of kedgeree and freezes in microwavable pots. A spiced rice without the fish would work well.

Japanese breakfast often has rice, either warm or chilled with things like spring onion, also various rice balls with different fillings.

BaronessBomburst · 13/08/2022 12:48

I sometimes make kedgeree with lentils instead of fish.

That's true @sashh meat for every meal appears to be the norm now and it wasn't before.
When I was a child in the 70s chicken in a sandwich would have been unthinkably luxurious! Now it seems to be the most common sandwich filling.

@ITriedToStopSwearingButICunt

Yep, my parents had chicken for Xmas dinner in the early 60s, as a child it was a Sunday roast food.

I don't remember being able to buy parts of a chicken either, you had a whole chicken or nothing.

Yes a chicken sandwich would be made on Monday with the left over meat.

Chips featured a lot in my childhood too, a slice of boiled ham and chips, chips with baked beans or sausages but not both. And we fried them in a pan.

Cheese on toast, or what my mother called 'milk cheese' on toast, basically warm milk up on a pan and crumble some wensleydale in to it and pour over toast.

Back tot he vegan breakfast I know you could use soya or almond milk but can you get a crumbly cheese substitute? I think I've seen vegan mozzarella but I don't know how it melts.

Yorkshire pudding featured a lot, toad in the hole or similar with chops or even stuffing balls.

Overnight Oats!!! Delicious, fruity and easy on the go!

2 x portions:
100g - 150g of fruit chopped finely
80g rolled oats
2 table spoons chia seeds
120ml dairy free milk
120g dairy free yogurt
1 tbsp maple syrup
1 teaspoon vanilla essence
handful of walnuts crushed
Seeds sprinkled on top!
Mix all together plop in a couple of jars and leave in fridge overnight.

My fave flavours are:
Blueberry & Lemon zest
Strawberry and Mango
Banana bread (add some raisins)
Carrot cake (add cinamon)
Spiced apple (microwave the apple and syrup + cinnamon for 30 seconds)

Although I need to try all the other suggestions too!

ITriedToStopSwearingButICunt · 18/08/2022 14:39

@ReginaPhalange1989

That sounds amazing! I've done a bit of chia soaked overnight with oat milk and raspberries, but nothing like your oat recipes there.

Thanks for that 😀

Potato waffles and baked beans

paulmccartneysbagel · 18/08/2022 14:52

The other morning I made potato hash / home fries for breakfast and it was lovely. I chopped potatoes into cubes and par boiled them, then fried them with onion and pepper. Added chopped up vegan sausage too, with a bit of garlic and paprika. It was lovely!

xfgdhfgnhkk007 · 18/08/2022 15:05

You could try toastadas - 2 slices of toast (regular or naice bread), rub a tiny bit of garlic into them and then some olive oil. Dice some tomatoes - rub them right into the bread and then pile on top. Top with parsley and/or spring onions (or whatever else you fancy, I sometimes add anchovies). Delicious!

Lastqueenofscotland2 · 18/08/2022 15:07

I usually just have the jus roll pain au chocolate which are accidentally vegan. Aldi now do vegan breakfast pastries too.
For something more healthy
Avocado toast with a flat mushroom on top
nice toast with nice peanut butter and if you want (I think it’s gross) banana on top.
My DP is dead into tofu scramble which I don’t love
home made beans on toast
there is a vegan shakshuka recepie on minimalist baker which is nice

xfgdhfgnhkk007 · 18/08/2022 15:12

(Obvs anchovies aren't vegan, lol)

maddy68 · 18/08/2022 15:19

Google vegan brunch. On images. Loads of ideas

Myownpapillon · 18/08/2022 15:23

I'm a fan of a smoothie in the morning, my 2 faves at the moment are

  • 1 banana, 1tbsp peanut butter, 1 tbsp oats and 200ml oat milk.

  • 165g mango (I use frozen), 1/3 can coconut milk, 1tsp ginger (I use frozen) and 1 tsp either honey or maple syrup.

Also love avocado so often mash one with some finely chopped red onion and tomatoes (sometimes olives too), squeeze of lemon and some black pepper then pile on toast or a muffin.

heathspeedwell · 18/08/2022 15:31

One of my Thai friends makes the most amazing porridge of quinoa cooked in coconut milk. She adds sliced fruit (bananas, mango and kiwi all work really well) and toasted coconut on top.

Try an American “breakfast casserole” - tear up pieces of bread, mix with chopped tomatoes, onions, peppers, chilli, top with vegan cheese and bake in the oven. You can also add fake ham etc.

Fluffyfluffflufffluff · 18/08/2022 16:46

I did overnight oats for over a year (oats, soy milk, linseed, pumpkin seeds, chia seeds, sunflower seeds, berries)... having a break from it now and my new thing is SMOOTHIES!

My favourite I've tried is soy milk, peanut butter, cinnamon and banana. Surprisingly filling, too.

ITriedToStopSwearingButICunt · 18/08/2022 19:24

Got a huge list of very tempting options now... thank you so much, everyone.

I finally tried scrambled tofu... was quite nice!
