What do you make for dinner in the warm weather?

was thinking of something like BLT sandwiches or a nice pasta dish but not really sure so need some inspiration!

Big salads!
Everything chopped small, with sweetcorn, cheese, peanuts.
Tomato and mozzarella salad, with coleslaw and 5 bean salad.
Whatever salad with hard boiled eggs and mackerel...

Or, chilli or curry cooked in the pressure cooker so no excess heat in the kitchen. Rice done in the microwave.

A bit more faff, but lovely and feels a bit special- picnic loaf.

Scoop the centre out of a boule, mix the bread crumbs with ragout, layer spinach leaves, ragout tomatoes and cheese til it's full. Put the lid back on and wrap/weight and refrigerate for a day. It then slices like a pie. You can do different fillings- cheese and tomato, salsa chilli and nachos, whatever.

Defrosted curry and cooked rice. Don't tend to cook from scratch on these hot days. Or I tend to buy a cooked chicken.

BBQ with either roasted veg (done on the BBQ) or salad. My Dh has cooked in bulk so we have enough for several days. We’ve added in stuffed vine leaves, couscous etc. We’ve boiled new potatoes for extra bulk.

Things like cold salmon and salad, curried chicken salad, always have a big couscous and pasta salad in the fridge for the DC too and Prewash salad leaves in bulk for them. Huge quantities of melon for DC. And big quantities of homemade hummus.
And they obsess with toasties and tortilla wraps in the summer hols anyway - so always have some bean chilli in the freezer so there is some nutritional value in that.
DC are constantly hungry so I fill the fridge with healthy snacks in bulk. Otherwise they just eat junk. They will happily eat peeled carrots and hummus etc if it is in view and easy to get out as well as fruit salad and Greek yoghurt.

A few salads: green leaf one, tomato and onion salad, variety of coleslaw/remoulade with baguette. Maybe grilled meat or fish

Just cooking for me tonight and put cauliflower florets and red onion tossed in paprika in the air fryer. Plus grated cheeses. Took less than 15 minutes. 👍

I was just thinking the same!

Definitely will add skewers to the dinner menu - also thinking avocado & chicken, or chicken & mango, plus something to go with new potatoes on a skewer but just can't think what. Any ideas (no fish/seafood btw)?

Last night I cooked some chicken in cayenne pepper and made it onto burgers.

Tonight everyone else was sorting themselves out so I've had the leftovers with salad and bread & butter.
