What do you put in your salads?

Simple as the title really.

I've never really ate them, now desperate for a bit of a health kick and some light food over summer.

What do you put in them?

Roasted or grilled vegetables are great in salads - sprouting broccoli, kale, bell peppers, red onions, squash. Really nice with a sharp vinaigrette dressing.

EaselArt · 11/07/2022 10:26

Lots of Grated carrot, tomatoes, cucumber, and lettuce
a medium amount of cottage cheese,/chicken/tuna in brine.
a very small amount of hummus, olives, chopped onions and dressing

WensleydaleCrumbs · 11/07/2022 10:27

My favourite at the moment is lots of lettuce leaves, cucumber, cherry tomatoes, mango, prawns and cooked hot smoked salmon flakes over with a spicy thousand island dressing :)

heldinadream · 11/07/2022 10:28

Lettuce
Baby spinach
White and red cabbage shredded
Grated carrot and celeriac
Courgettes (instead of cucumber, which I don't like much)
Tomatoes
Chestnut mushrooms (or ordinary but prefer chestnut specially in salads)
Red peppers
Avocados
Finely chopped cauliflower (really yum)
Small amount of apple

Dressing

Can add - cheese, nuts, seeds like sunflower seeds or pumpkin seeds, dried fruit, hard boiled eggs, cooked potatoes, rice, quinoa, pasta etc.

iRun2eatCake · 11/07/2022 10:28

Mackerel, eggs, prawns

Greek salad- tomato, cucumber, feta olives

Broccoli salad- barely steam broccoli, feta, cherry tomatoes hazelnuts, vinaigrette dressing

Cobb salad- bacon, chicken, avocado, sweetcorn, cheddar cheese, boiled egg.

Noodle salad- cold curry noodles, sugar snap peas, sundries tomatoes peanuts or chickpeas

Watermelon starter- watermelon, vine tomatoes, mozzarella and fig chutney

Apple slaw- Apple, radish, lettuce, celery with yoghurt dressing

Caspianberg · 11/07/2022 10:48

Recent ones:

watermelon, cucumber, tomato, mint, feta, balsamic

Black bean, chickpea, sweet corn, red pepper, spinach finely chopped, red onion, coriander, vinegar/ mustard dressing

PinkSkiesAtNight · 11/07/2022 10:54

Anything and everything 😄
I usually use raw spinach as the base, then add cucumber/beetroot/red pepper/cherry tomatoes/apple/raisins/strawberries

Then, chickpeas/kidney beans/similar

And always lots of protein: boiled egg/tuna/cheese - feta/mozzarella

As a PP said, one of my summer faves is watermelon, feta, mint, and balsamic. Bloody lovely.

Hate a boring salad made of lettuce/tomato/cucumber!

Cotherstone · 11/07/2022 10:57

We’ve just started making kisir, which is amazing as a summer salad with halloumi or cold chicken.

Amdone123 · 11/07/2022 10:58

@WensleydaleCrumbs , that sounds lovely. Tea sorted, thanks !

est1899 · 11/07/2022 11:01

Smoked paprika Mayo, cucumber, radish, romaine lettuce, bacon, chorizo sometimes, roasted peppers, courgette and plum tomatoes, roasted garlic cloves. And a bit of pasta.

grapehyacinthisactuallyblue · 11/07/2022 11:02

I pretty much put anything available in fridge. I have salad as brunch everyday instead of breakfast + lunch.
Today I just had cubed black pudding, sauteed onions, blue cheese and nuts and seeds on top of spinach, carrot and cauliflower, with sesame dressing. Yum.

Choopi · 11/07/2022 11:03

I just had a salad as an early lunch. It was just what we had in the fridge. Lettuce, baby spinach, red onion, cucumber, tomatoes, beetroot, red pepper, sweetcorn and feta. I like my salad chopped nice and small with a vinegarette dressing. I had some homemade coleslaw that was left over from a barbeque yesterday too.
I'm a bit of a boring salad person to be honest, not a fan of fruit in my salads or beany salads.

Ifailed · 11/07/2022 11:05

Chips.

NightmareSlashDelightful · 11/07/2022 11:06

I make a corking steak and blue cheese salad.

Veryverycalmnow · 11/07/2022 11:07

Halloumi, capers, olives, tomato

FetchezLaVache · 11/07/2022 11:07

Whatever is to hand (lettuce, spring onions, tomatoes, chickpeas, etc)

Plus, inspired by a delicious salad made by DP's aunt: grated carrot, grated fresh ginger, soy sauce and honey. Amazing.

Hoppinggreen · 11/07/2022 11:08

Salami, artichoke and mozzarella with a fennel, orange and balsamic dressing
Raw fresh beetroot with orange, feta and dill
Are my 2 favourites at the moment

BoJoGoGo · 11/07/2022 11:13

It’s all about seeds for me.

HouseofGods · 11/07/2022 12:31

I'm lazy and have been buying a big, crunchy, mixed salad from Aldi then adding chicken and sweet chilli dressing.

But, if you're less lazy than me and would make it yourself then JustJessFood on insta has a few new salad recipes at the moment which have gone down well with friends that have made them. They look a bit more interesting than mine anyway

TheYearOfSmallThings · 11/07/2022 12:41

I wish I could employ someone just to buy lovely fruit and vegetables for me and then chop and grate and put them together into delicious salads for me. And also make dressings, and fruit salads for dessert.

I would be delighted to eat healthily if someone just took the work out of it. M&S already make a fortune out of me.

doodleygirl · 11/07/2022 12:44

Salads are my fave meal. I griddle lots of veg such as courgettes, peppers, tender stem broccoli, add leaves, onions, quinoa, chicken/fish/cheese/eggs and a lime vinaigrette. Delicious 😋

Wotrewelookinat · 11/07/2022 18:26
