What do you put in your salads?

Simple as the title really.

I've never really ate them, now desperate for a bit of a health kick and some light food over summer.

What do you put in them?

Salad is my go to mid week meal when I'm rushed between work and dd and I don't want the carb based meal dd is having (pasta/pitta bread pizza etc).

Like some other posters I use whatever is in the fridge, bits of what I'm making for dd etc. I'm veggie so no meat/fish but usually cottage cheese or humus with some combination of cherry toms, lettuce, rocket, edamame beans, green beans, broccoli, cucumber, celery etc.

Its not a meal I associate with recipes or effort - its convenience food (but healthy).

Greek salad- cucumber, tuna, tomato, onion, feta cheese with olives and anchovies
Bulgar wheat, parsley, mint, finely chopped spring onions, cucumber and tomato, dressed with lemon and olive oil.
Generally mine are a hotchpotch of whatever comes to hand with a decent vinaigrette dressing.

The current favourite is salad leaves, tomatoes, cucumber, jarred chargrilled red peppers, canned lentils, strips of sirloin steak, walnuts, and crumbled blue cheese with a mustard and balsamic dressing.

Also crispy duck with salad leaves, cucumber, watermelon chunks, pomegranate seeds, feta and a tahini dressing.

Current favourite is Fatoush. Chopped lettuce, tomatoes, cucumber, sliced radish, mint, pomegranate, feta and a sumac dressing served with fried pita breads with salt and black pepper.

I make enough dressing for 3 or 4 servings: olive oil, red wine or apple cider vinegar, big dollop strong mustard, pinch of salt, pinch of sugar.

Lamb's lettuce
Baby leaves/spinach
Cress
Pumpkin seeds, sunflower seeds, linseed, walnuts
Tinned lentils or chickpeas
Grated carrot
Orange segments
Feta or blue cheese
Peppers
Red onion
Avocado

My favourite at the moment is lots of lettuce leaves, cucumber, cherry tomatoes, mango, prawns and cooked hot smoked salmon flakes over with a spicy thousand island dressing :)

This is us tonight but with coconut oil and chilli dressing instead of 1000 island and avocado instead of mango

Just bookmarking as I was thinking about what salads to make today!

My go to is roasted sweet potato, goats cheese, pine nuts, honey on top of any leaves I've got. Sometimes chuck in some cold lentils!

Giant couscous with roasted vegetables
German potato salad
Greek
French grated carrot
French cucumber salad with dill
Courgette, pea, mint, feta and lemon
A Tex-mex thing which is romaine lettuce, avocado, red onion, tomatoes, ranch dressing, shredded chicken, grated cheddar and crumbled tortilla chips
Bean salad with butter beans, red onion, tomatoes, mustard and red wine vinegar dressing, capers, chilli and herbs

I like to make a few different ones served with a baguette

Recent ones are Nicoise, or grilled peach, mint, mozzarella and prosciutto, or walnut, grape and goats cheese.

Tonight was salmon with a honey glaze, cherry toms, avocado, cucumber, red onion and shredded lettuce.

I do a nice cold salad of cooled quinoa, chopped up pepper, pomegranate seeds, mint leaves with some lemon juice and olive oil mixed in. Sometimes add feta.

then a sort of salad where I fry quorn pieces with some niger seeds (could do chicken), add the quorn to a plate with some spinach leaves, some drained tinned chickpeas, some cucumber, avocado, red onion, maybe some sweet potato. Bit of balsamic over it.

I saw this on a video recently for a sandwich filling and I've adapted it and been eating it for weeks:
Either grated or chopped red cabbage
Chopped lettuce
Sliced cucumber
Sliced tomatoes or chopped sundried tomatoes
Grated carrot
Roquito(sp? - the small little sweet ball ones in a jar) peppers or sweet red peppers
Sweetcorn
Sliced red onion
Dill
Cubed avocado if I feel like it

Dressing: red wine vinegar and/or mayo mixed in with italian herbs.

I do a 'fancier' salad:
Baby spinach
Rocket
Kale
Cubed Avocado
Cubed/sliced beetroot
Chopped orange
Chopped cashews/pine nuts
Pomegranate
Use some pomegranate and orange juice over the top with a bit of balsamic vinegar mixed in and sometimes small bits of feta in there too to round it off.

A bog standard lettuce, cucumber, carrot, tomato, beetroot and sweetcorn can also go down well with a good dressing.

My favourite thing is to have it with grains so either one or a mix of barley, bulgar wheat, quinoa or maybe couscous if you want to do that to add a tiny bit of carbs sprinkled in there to fill you up.

Lettuce, cucumber, tomato. Celery if I can be arsed.

Lovage if there is any and it's not raining. Radishes if they were cheap. Pickled onions if I've been getting bored.

Stilton if it's a special occasion.

I like chopped up mixed lettuce, diced pear, chopped blue cheese, chopped walnuts, cranberries, grapes. All tipped in a mixing bowl, mixed togeather with some honey and mustard dressing and served in a big bowl so that I can sit in my deck chair and eat with just a fork. Yum!

Just got home from a 12 hour shift and after showering etc - made a salad with lettuce 🥬 tomato 🍅 and spring onion with some hummus and Camembert in amongst it.

Very tasty it was too

I have salad every day for lunch at work, and generally add whatever is knocking around.
Base salad of leaves, cucumber, pepper, red or spring onion (I don't like tomatoes)
Added to that, a selection of the following: olives, feta, halloumi, tuna, leftover cooked chicken, ham, hard boiled egg, avocado, grapes, cubes of cheddar, salami...whatever I have.
I keep a bottle of balsamic vinegar in the cupboard at work so I drizzle a bit of that on as a dressing.

Chilli pickled garlic, artichokes, black olives, green olives, pimento stuffed olives, pickled red and green jalapeños, pickled red peppers, capers, caperberries, sundried tomatoes, rocket, wild marjoram, pistachios, toasted pine nuts, roasted squash, goat or sheep milk cheeses, salami, mortadella, cooked vinegared courgette, aubergine, peppers, onions, tomatoes, beetroot, fennel, oranges, celery, thyme, toasted gf breadcrumbs, evoo, lemon, cucumber spring onions, radishes, GF pasta, rice, mushrooms...spicy king prawns, fish, meats....

If it's a vegetable, fruit or herb, we can find a way of getting it into a salad.
