What to do with salmon fillets

I have a couple of salmon fillets that I took out the freezer and defrosted, forgetting that I already had dinner sorted. I really need to cook them today, so looking ideas for what to do with it once I’ve oven baked them. Anyone have any good recipes I can use them in, or dishes they would be good to add to? I always just have salmon and roasted veg/potatoes!

I love a bit of cold roasted salmon in a sandwich with mayo salad and cranberry sauce!

I make a salad with rice salmon spring onions and sweet chilli sauce.

Also there is a fast 800 receipt roasting them with broccoli and sesame seeds and soy sauce

Cook thru in a foil packet with butter, white wine, salt and a bay leaf. Cool and use for lunch tomorrow in a salad or sandwich..yum

We love frittata with salmon, spinach, red onion, potatoes (tinned work well) and lots of cheese. Serve with salad and crusty bread, yum!

Spread pesto on top then some breadcrumbs. Have with a salad.

Pop them in a foil packet with some green beans and lemon juice and bake in the oven. Lovely with a bit of potato salad.

Break them up and stir through hot tagliatelle with some peas and garlic & herb Philly plus a bit of reserved pasta water to loosen it.
In colder months, I flake it and use in a chowder. Both recipes mean you can stretch 2 fillets to 4 people.

Heat up a few tsp of soy sauce with some water, add chopped ginger and spring onion, fry the salmon in the mix and serve with rice and green veg, topped with a bit more chopped spring onion. I like to put a jasmine tea bag in the rice too!

Poach them, let them cool and then mash them up with some mayo, lemon zest and chives and then put it in a baguette.

Cook them in the oven with a Chinese/Thai style marinade and a few shredded spring onions. Serve with Jasmine rice and stir fry vegetables or oven roasted garlic broccoli.

Lightly fry mushrooms, add any other veg you like(we do broccoli and sweetcorn). Add Worcestershire sauce, you flaked salmon and cream cheese. Mix with pasta.

I’m making a salmon & broccoli quiche for our tea tonight (will do us for lunch tomorrow too.) It’s lovely with salad & new potatoes.

I make a kind of ramen. Over roast the salmon. Meanwhile dry off chestnut mushrooms, baby corn, mange tout, pak choi and anything else you fancy. Add in boiling water and a stock pot. Chilli sauce, soy sauce, hoisin sauce (whatever you like) and some dried noodles. Then the broth in a big bowl with salmon fillet on top. Coriander if you like it.
