What to do with salmon fillets

I have a couple of salmon fillets that I took out the freezer and defrosted, forgetting that I already had dinner sorted. I really need to cook them today, so looking ideas for what to do with it once I’ve oven baked them. Anyone have any good recipes I can use them in, or dishes they would be good to add to? I always just have salmon and roasted veg/potatoes!

We are having soy salmon noodles tonight it's delicious. Wrap salmon in a foil parcel with some soy sauce on top, can also add sliced chilli's or spring onions etc. Oven bake. Then stir-fry aosm veg we use those stir fry packets, add in some ready to wok rice noodles (or any noodles or rice) then add the salmon on top.

I also like a recipe I'll have to dig it out for lemon salmon pasta but it uses smoked salmon

I love to put them in a tinfoil parcel and add slivers of red pepper, spring onion, grated fresh ginger, fresh coriander, chilli flakes and soy sauce. Tightly seal up and bake. Serve with rice or new potatoes and sugar snap peas

Alternatively I love to poach them and serve cold with really good mayo and brown soda bread, real butter, pickled cucumber - also delicious!
