If you're vegetarian, what's for dinner tonight?

We are trying to eat less meat for health and financial reasons, but struggling for inspiration for dinner tonight. On a Friday we normally make something just for DH and I to eat in front of a film. Something like lamb kofte, chicken kebabs, fajitas, tacos... the last two can be made veggie easily but we had them last week!

Any suggestions before I make pasta and sauce, again?! Thanks

I've got 5 to cook for today inc vegetarians and I'm planning on keeping away from the cooker in this heat so I'll do both meat and vegetarian sausages, a couple of salads and put some parbaked bread in too

Couscous salad with red onion, chickpeas and some leftover roasted BNS and sweet potato. Lots of parsley and mint, and some kind of dressing.

This 10 minute couscous salad is so quick, easy and delicious we have it every week. I use mixed seeds instead of pine nuts and prefer giant couscous. If you cook it once then you'll be hooked!

We're having Mac and cheese, but proper grown up cheese sauce with lots of different cheese ends that need using up and truffle mustard through the sauce topped with pangrattato, yuuuuuum. The kids had veggie egg fried rice earlier and ice cream, cos it's Friday night. We're not veggie, but do try to eat less meat.

Cheese and tomato quiche (cheating and already have shortcrust pastry). I'll just have a large salad, and DH can have new potatoes if he wants a filler (I've already served tomato coucous and homemade potato salad this week, which might be other options). It's a nice summery tea for us.

Veg casserole

Turnip , potatoes, carrots, onions, barley, marrow fat peas. Cooked in stock in slow cooker and served with hot buttered bread

We have pizza on Fridays usuay anyway. Bringing it forward to lunch out today as it will be hitting 40 later here and I'm not cooking this week at all.

I'll still have pizza for lunch though.

I’m not vegetarian (though was for 20 years so we eat a lot of veg meals). Kebabs and koftas can easily be made vegetarian: you can use halloumi or paneer or look up veg koftas as there are lots of recipes. We have dal, rice and naan or chapatis usually every week. Veg pizza is easy and relatively cheap if you make your own dough.

I make lots of lentil soups, cauliflower cheese with salad, big Greek salad with garlic bread, Cuban black bean soup (also great over cheese nachos). Lots of Indian curries with paneer or chickpeas. Spicy vegetable ramen.

Split pea soup with spinach tonight... chickpea ratatouille bake with halloumi slices on is a favourite, also banjan or kaddoo borani (aubergines or pumpkin with garlicky yogurt). In fact, if you haven't tried much Afghan food, have a look at some recipes, they have amazing veggie dishes

Not veggie but eat a lot of veggie meals. Tonight I've just had a salad with warm, baked curried cauliflower and chickpeas on a spinach, cucumber, apple, celery and red onion base with a yoghurt and mint dressing. It was divine!

Not tonight (too lazy in the heat!), but good recent weekend dinners have been halloumi and portobello mushroom burgers with all the trimmings, and marinated and baked paneer in a wrap with salad and chutneys.
