If you're vegetarian, what's for dinner tonight?

We are trying to eat less meat for health and financial reasons, but struggling for inspiration for dinner tonight. On a Friday we normally make something just for DH and I to eat in front of a film. Something like lamb kofte, chicken kebabs, fajitas, tacos... the last two can be made veggie easily but we had them last week!

Any suggestions before I make pasta and sauce, again?! Thanks

Pizza and garlic bread tonight

Tomorrow might do a halloumi salad ( massive salad , obvs)
Mixed leaves , sweetcorn, tomatoe , peppers , cucumber , shallow fry cubes of haloumi and drizzle with sweet chilli sauce

Or nachos baked with cheese , refried beans and salsa

I baked the aubergine and halloumi in the air fryer so it took about an hour from start to finish.

Lazy one for us higgity quiche red pepper one, avocado, tomato salsa, cucumber, tomato onion salad, pot of hummus with carrot and red pepper sticks and a pot of olives. Everything just dumped on the table easy and yummy

Quick mushroom and pepper stir fry with loads of fresh shredded cabbage, carrot and bean sprouts, stirred in a sweet chilli sauce and served with noodles. Ten minute meal.

We had a vegetable curry with some added chickpeas and frozen paratha because it’s the weekend and I didn’t want to make them from scratch. The truth is though that the frozen ones are better than mine because they’re wafer thin and crispy.

The curry was by Jamie Oliver, his southern Indian one, but I always increase the spices used by about 3 times the quantity. Today we had butternut squash in it as well as carrot, cauliflower, green beans, aubergine, peas and chick peas. There was rice and salad as well on the side.

Dh is vegetarian. Tonight I diced some beetroot from those vacuum bags and added sour cream and fresh dill. I made a cold potato salad with pickled cucumbers and boiled eggs. A roast sweet potato, a salad of sliced tomatoes with olive oil, feta cheese and basil, diced avocado in lemon and olive oil and parsley and grilled some halloumi.

And just to add that we’re not vegetarians but we do eat vegetarian meals throughout the week because we like them.

Courgettes, peppers and a little leftover paneer grilled in souvlaki seasoning. Pitta breads, tzatziki, rocket and a spicy Middle Eastern sauce called Zhug. Absolute perfection for a heatwave.

I'm not vegetarian, but dinner tonight was a slice of griddled sourdough, with smashed avocado, griddled halloumi, mayo and chilli sauce 😋

Firecracker tofu and veg curry and sticky rice. Firecracker sauce was a Wagamama sachet. Took 15 mins and was lush.

Not veggie but eat mostly veggie. Had quorn Penang curry (paste from Thai supermarket and a can of coconut milk) with broccoli, mushrooms, French beans and peppers. Blooming delicious.

I chopped up red pepper, aubergine, cauliflower into big chunks, added choices of garlic, then drizzled olive oil and added italian herb mix. Roasted that in the oven. Sautéed mushrooms in butter. I mixed this together with a fresh pasta sauce and added some pasta.

And they last for ages! I just keep them in the fridge. So quick and easy with the Quorn and a load of frozen or fresh veg.

Baked potato with cheese, falafels, hummus and boiled asparagus. I don't eat bready things so quite often have baked pots instead of wraps, etc.
Tomorrow I'll do a Jamie Oliver dahl from his 15 mins cookbook (takes me about 25 mins Wink ) I add some chickpeas and sometimes some roast veg to turn it into a main meal (with rice etc). It's really easy and tastes amazing because of the fresh ginger etc.

I used this from bbc good food It’s easy and tasty. Some of the suggestions beneath sound good too.
