What can I make with chicken thighs

Usually do a peri peri marinade but I'm not feeling that today. What do you like to make with chicken thighs?

This is my go to for chicken thighs as it's so easy - you just Chuck it all in the dish and in the oven - no real prep. Serve with green veg or salad. Always goes down well

I mix passata, Lea and perinns, paprika, garlic, S&P, and some honey. Cover the chicken and cook on medium low for around an hour / hour and a half then shred.

Teriyaki chicken with rice/noodles and stir-fry veg, Korean fried chicken, at the weekend we had Ainsley Harriot's caramel chicken which was delicious. Depends whether they have the bone in or not or if you are able to remove it, as that makes a difference with what you can cook.

I do 2 things:


  1. Chinese style - add to an oven dish with ginger, garlic, spring onions, soy, sesame, coriander etc, bake for 30 mins then right at the end add a spoonful of flour to thicken the liquid in to a sauce. Service with rice and Asian greens

  2. Mix ground almonds with any seasoning you fancy, coat the chicken thighs and bake. They go all crispy, sort of like batter. Very tasty.

Brown in a heavy bottomed frying pan both sides with plenty of salt and pepper, turn the heat down low and chuck in 3 or 4 cloves of garlic and ditto lemon slices. Put the lid on and leave it for about an hour.
Serve it with potatoes or rice with any green veg you like.
Easy, quick, always goes down well in our house.

I want to try the ground almond idea above, sounds great!

I make a version of one of these sheet pan recipes most weeks.

  1. I haven't bothered with the yogurt marinade since the first time I made this. Sometimes I add smoked paprika instead of turmeric, usually spread it to two sheets and ramp up the veg (broccoli, fennel bulb, kale or cauliflower).

Agreed @ShirleyJackson love the Nigella chicken thigh and pea tray bake - the frozen peas almost steam the chicken in the oven and the vermouth gives it good flavour.

Pat dry with kitchen roll, then add salt and pepper, paprika, garlic powder, onion powder, chilli powder, and rub in both sides. Fry the whole thigh skin side down first for a few minutes, flip and cook, repeat til done. If you want, add herbs towards the end so they don't burn. Frying skin side down first makes it really crispy 😋

I buy the Cajun seasoning (about 60p) from Aldi & coat thighs with a tbsp of olive oil.
Serve with peri peri micro rice & green beans.
Quick, easy & v tasty!

Cut into chunks, marinate in a mix of soy sauce, honey, chilli and ginger, thread on to skewers, barbecue or just stick under the grill. Delish!

I usually do a Spanish style stew, with passata, maybe a bit of stock, lots of garlic, peppers, Paprika, smoked and original and some chopped black olives. Simmer the sauce separately for 20 minutes or so then pour over the chicken, put in the oven at 180/190 for around 30 minutes or until chicken is completely cooked through. I usually take out after 20 minutes and crumble over some feta, put back in for final 10 minutes or so to let it melt a bit.

Serve with roasted charlotte potatoes 👍
