Failsafe gluten free cake, not lemon polenta?

I've made lemon polenta cake successfully a few times but looking for a change! Any favourites?

I've varied by doing orange, and also lime but substituted some of the potato with coconut to make lime and coconut

Probably completely missing brief as it’s chocolate and not even a cake but this is very easy and lovely with gluten free biscuits.

I sometimes use ginger biscuits. And substitute the marshmallows for veggie marshmallows, smashed meringue or popcorn if vegetarians are eating it.

it look great stacked with icing sugar, sprinkles and candles.
