Failsafe gluten free cake, not lemon polenta?

I've made lemon polenta cake successfully a few times but looking for a change! Any favourites?

I usually substitute some of the gluten free flour for potato flour, and I find that recipes that use buttermilk and baking soda tend to have the best results with rising, plus usually are more moist. Brownies work well gluten free too, as does banana bread.

Gluten free flour is definitely the way to go. You can substitute the wheat flour for it in any recipe. Like a PP said, just make sure it contains xantham gum, or you add it. Doves Farm self raising flour does contain it, while the plain flour does not. I also find that I need to add some extra liquid such as milk or water for cakes and biscuits. GF flour has enabled me to enjoy baking again. I am so grateful for it.

Flourless brownies with ground almonds are easy and simple. Nigella suggests piling them up in a pyramid with a sprinkle of icing sugar and birthday candles in them which looks cute.

i used Asda GF flour and it really isn’t needed.

I also use the Asda GF flour!

I agree it's a very good flour but can't xanthum gum is good for binding - probability more so for biscuits and especially shortbread than cakes and I do find the cakes are better with it.

My failsafe one is this,
it’s a Taiwanese Castella cake, it works just as well with gf flour as muggle. It’s as fluffy as a cloud and is good for Swiss roll.

As nice as all the brownie recipes are, if the OP is gluten free she will be fed up of brownies. If I go into a cafe and ask if they have any gluten free cake and they offer me brownies it’s just so very disappointing! But then I’ve been coeliac for a number of years. However If there’s a gf cake (like some of the recipes on here ) it really makes my day!

I made this for my grandkids... it's pretty epic as far as chocolate cake goes,and is just as good without the icing on top.

I've made this recipe for a gluten free caramel cake a couple of times successfully. It's one of the best GF cakes I've made, and while I wouldn't say it's as good as a cake with gluten, the texture is very good (and the buttercream is lovely).

I find any cake with grated veg in (carrot/courgette) works well with GF flour as the veg makes it moist so you can just substitute 1:1

My coeliac friend bakes a lot of Ottolenghi cake recipes - she made one this week with berries, almonds, possibly some coconut. It was delicious!

I went with Becky Excells carrot cake tray bake! It was a leap of faith because the mixture was soooo liquidy but it was fantastic and impressed my whole family! I ramped it up by putting crushed walnuts on half of it, the walnut half went first. I cheated by leaving out the orange zest and by buying ready made icing (waitrose, delicious). I used Doves Farm flour so no need for xanthan gum.

carrot cake is my most fav cake in the whole world and I have loads of carrots!

That's so weird! I'm getting 404 on the tray bake now too? But the loaf cake is the same, I guess you could adapt the recipe to any tin really. I found the mixture to be very liquid (six eggs!!) and if I was making it again I'd use just slightly less of everything as the mixture rose a bit high.

I'm also getting brave about sugar. I use demerara for everything, I don't keep any other sugar in the house. Could easily double the amount of spice too.
