Basic gluten free meals you eat all the time

What are your cheap, quick, easy, go-to GF meals? A lot of GF recipes online seem to be quite faffy.

Would love dinner ideas, and lunches seem to be the hardest. DP is coeliac and I have gluten sensitivity - we basically live off baked potatoes with beans or tuna, and curries/stir fries with rice. I'm not keen on a lot of the ultra processed GF pasta, bread, etc.

Anything with rice. Chilli, nasi goreng, paella, biryani, Bulgogi, donburi, bibimbap, kedgeree (I use bacon and egg, not fish), poke bowls,

Anything else with potatoes (boiled, chips, mash, whatever). Steak, pork chops, mince beef and onion, cottage pie, sausages, sausage tray bake. Bubble and squeak mash. Hotpots. Potato topped pies. Goulash.

Lentil dishes. Daal, black lentils in a curry. Saag with green lentils.

Bean casseroles with chicken on top. Shakshuka. Sweetcorn fritters (bound with egg and cornflour). Patatas bravas with meatballs. Paneer tray bake. Lasagne with thin veg layers not pasta.

That's from my regular mix of recipes, and we're not GF.

I find gluten-free bread pretty awful too, but the gluten-free pasta from Adsa is ok and not too much of a rip-off. I have it with a 'storecupboard' sauce made from tinned tomatoes, chopped capsicum and jalapeno peppers, black olives, a bit of grated carrot, and either tinned tuna/seafood or mushrooms.

Spanish omelette
Omelette wraps (use thin egg omelette as the wrap)
Use rice noodles for dishes for variety.

A rut is a nightmare.

Asda do tempura chicken mini fillets which are gluten free. Easy to through in the oven with some wedges/chips. Sausages and frozen roasties with bisto best gravy if I fancy something savoury. I do tend to eat a lot of curries and rice. Old el Paso do corn tortilla if you like fajitas. They're very small though. Old el paso nacho kit is gluten free too.

Lunch:
Homemade soup
Salad with hard boiled eggs or cold meat/tinned fish/cheese/nuts
Leftovers from dinner, ie reheated bolognaise

Heinz carrot and coriander is gluten free.
Muffins made with eggs and cheese. I add chopped bacon too.

Are you vegetarian?

Pasta - we use lentil pasta as like you I don't like gluten free pasta.

I will however buy GF gnocchi.

Polenta is good for a change, if you can find it in blocks, chop it up like fries and oven back or fry.

I pretty much have soup for lunch every day, but not so keen on it now the weather is getting warmer.

Roast veg is a good meal on its own. - squash, aubergine, onion, peppers, potatoes, courgette etc. Sometimes add gluten free sausages. Sometimes throw can of chickpeas and chopped tomatoes in with some fresh herbs. Nice hot or cold, v versatile!

Are you vegetarian or omnivore? We have lots of things like cottage pie, fish pie, paella, risotto, ratatouille, stir fries, pad thai, ramen bowls, hot salads, e.g. grilled chicken with pine nuts, sunflower seeds and a mixture of beans and chopped green veg. Hot smoked salmon with spinach and new potatoes.

For snacks my kids have nakd bars and Nairns biscuits, mrs crimble coconut macaroons, egg muffins (scrambled egg, chopped veg and bacon baked in a muffin tin in the oven)

Tesco do a really nice red lentil pasta. It's stocked with the normal pasta, not the GF stuff.

Sausages (most own brand 'finest' ones are GF), baked beans or cauliflower cheese and mini roast potatoes.

Chilli and nachos

Salmon with pesto, rice and tenderstem broccoli

Rice with scrambled egg bacon, onion, peas etc mixed in

Chicken wrapped in posh ham or stuffed with pesto / Philadelphia with potatoes and veg

Salad with egg, cheese, prawns etc.

We don't technically need to be gluten free, but my dc is allergic to wheat so we are completely gluten free for main meals. We eat a lot of rice, rice noodles, rice pasta, etc. Also bake quite a lot using gluten free flours.

That seems an awful lot of salt *@MinesATriple* do you think it is a typo, otherwise I would be wary of the health risks and that the salt would overpower the other flavours - and I LOVE salt? I think that I would prefer to use sliced chicken breast as well, but am I changing the recipe too much, it does sound delicious, and I wouldn't want to ruin it?!!

Pretty much anything that we eat non-gluten free - we just source GF alternatives for flour, and things such as soy sauce, and worcestershire sauce.

For example, yesterday we did hamburgers and chips (gf burger patty and bun). Today we're doing southern fried chicken, with coleslaw, corncob and chips. Tomorrow is roast lamb and all the trimmings, with creme brulee to follow. Following day is Chicken in a creamy onion sauce on tagliatelle (gf pasta), with chocolate mouse to follow. Then later in the week, there's shepherd's pie and veges, and chicken fajitas.

We do Chinese, Japanese, Italian, Anglo, Mexican, French cuisine. We've got pretty good at it over the years!

I'm celiac and can't eat dairy and some nightshades (tomatoes, potatoes) either.
Eat a lot of Basmati rice, gluten free pasta (without potato starch so not easy to find), batch cook curries, have eggs for breakfast with gf bread (Schar seeded loaf, eye wateringly expensive and tiny slices but tastes good and one of the few without potato starch/flour).
Snack on fruit, peanut butter, vegan chocolate, nuts as need the calories to maintain weight.

Spanish/style baked rice dishes with vegetables or meat in them. Diana Henry has some good recipes.

Risotto.

Fish with potatoes.
Fish pie (mash on top).
Salmon with gf breadcrumb and paprika topping.

Spanish omlette? Omlette with onions, peppers, peas, diced potato and cheese cooked into it.

Spinach dahl and rice

Chilli and rice - veggie or beef

Venison or Beef & root veg casserole with mash

Chicken tray bake: chicken legs, fresh herbs, wine, garlic, baby new potatoes, cherry tomatoes, olives and quartered peeled red onions baked for 45 mins.

Dove’s Farm GF corn pasta though I’m going to try lentil pasta after reading this thread.
Dove’s Farm gf pastry is pretty good for chicken pie
Otherwise dhal, rice, chapattis (also dove’s farm)
Pad Thai (rice noodles)
Egg fried rice
Stir fry and rice
Interesting spicy rice with meat
