Basic gluten free meals you eat all the time

What are your cheap, quick, easy, go-to GF meals? A lot of GF recipes online seem to be quite faffy.

Would love dinner ideas, and lunches seem to be the hardest. DP is coeliac and I have gluten sensitivity - we basically live off baked potatoes with beans or tuna, and curries/stir fries with rice. I'm not keen on a lot of the ultra processed GF pasta, bread, etc.

I do a lot of GF catering and have found the Warburton gf bread range to be very good.

Cornflour Yorkshire puddings for the win.

Warburtons gf crumpets and soft rolls, alternatively we buy doves farm white bread flour and put it in the bread maker: my boys originally hated being gf as the breads were just so rubbish in comparison but the homemade loaves are brilliant

Check out the Becky Excell recipes if you haven't already her first book has quite a few dinner recipes in and more on her blog. Www.glutenfreecuppatea.com They are straightforward and use generally simple ingredients/techniques and are mostly quick/cheap. If you use Facebook there's a v helpful support group for her recipes which she runs.

We have most things really:

Stir fries with rice or rice noodles

Casseroles with rice or potatoes

Curries with rice & naan bread (Becky Excell has a v simple recipe for those)

Mexican - tacos/fajitas etc are v easy as Old El Paso do GF wraps and most supermarket own taco shells are GF.

Roast dinners - v easy to make GF

Pasta dishes - I like the Garofolo GF pasta - it's got the best flavour/texture - not as cheap as the supermarket GF pasta though

Last night we had homemade beer battered fish & chips as a special treat - v easy GF batter recipe and it was delicious - my DC said it was better than the chip shop ShockGrin

Could you tell me what recipe you use for GF bread? I used to make it in the food processor. Appearance and texture fine etc when cooked. But it always tasted strangely bitter and I stopped making it after a while. I followed the recipe on the DovesFarm flour pack.

DS is coeliac and basically eats the same meal as us but the GF version so this week we've had:

Shepherd's pie, veg, yorkshire puds
Sausage &bean stew
Chilli & rice
Frozen fish, chips, peas
Homemade pizzas

He's off school so has been having chicken nuggets, fish fingers, soup, paninis, pasta for lunch but would usually just have a tuna sandwich (we've found M&S bread is the only decent GF bread)

Some great ideas here (I think I'll be trying out the lentil pasta).
I discovered that morrisons vegetable suet is gf so we had meat and potatoe pie in the week.

These lentil pastas, do they have a funny taste or can you eat them as normal with the usual sauces etc?

Spag bol - I use barilla or napolina gluten free spaghetti, tastes like the normal stuff.

Sausage and mash - favourite sausages are asda or morrisons own brand pork sausages ( they are just the normal sausages that happen to be GF).

Cottage / Shepherds Pie

Chicken and chips

Chilli con carne with rice

All Indian style food (sainsburys do red onion bhajis that are gluten free in the normal Indian bit)

Fish and 'chips' (either bought from the local GF chippy, or using supermakert GF breaded fish and whatever potato dish we have with it)

Lasagne made with GF pasta sheets

Fried breakfasts

Omelettes

Pate on gluten free toast

Gluten free chicken nuggets (asda - taste like McDonalds) and fries

GF burger (all supermarket ranges) with GF onion rings (asda) fries in a Warburtons GF bun

GF fishfingers (Birdseye) and Potato waffles

Morrisons gluten free pizzas - either the frozen ones or if you have a fresh pizza counter they will make one to your specs

chow mein/ stir fry - boil GF spaghetti, leave it to dry and use instead of egg noodles. GF hoisin sauce and cow mein sauce available from Asda

any pie = use Jus Rol GF pastry

stews etc sub flour for cornflour

My husband is the baker and goes by estimates rather than measurements (not helpful!) He started with this recipe but it was also a bit bitter. So he reduced the baking powder but increased the xanthum gum (Amazon is cheaper in bulk) and now it's pretty awesome. The boys (8 and 6) go through at least two loaves a week. No cakey texture, no bitter taste, much more intact as a bread and doesn't crumble. We also preferred the Aldi baking powder to the expensive gf baking powder.

My Gluten free diet is pretty boring really.
on week nights we tend to use
GF sausages, mash, veg and onion gravy
GF fish fingers, (love a toasted Fish finger sandwich)
Cottage pie
Spaghetti bolognese
Chicken and ham pasta bake. I make it with cheese sauce a bit of paprika (anything you fancy really) and extra cheese on top.
Today we've had a roast beef dinner.
I like homemade soups, I do them I the slow cooker then use the hand blender.

Agree- gf roasts are awesome- stuffing and gravy from Asda aren't too pricey and this mix is the best for Yorkshire and pancakes (do have a super hot oiled tray and oven to rise well) www.glutenfree4kids.com/?q=content/yorkshire-puddings

We found eating out to be quite hard. Luckily we have found a couple of great independent pubs and restaurants local to us in Ipswich: the washbrook inn and the regal in felixstowe are very good. National chains we've found Cosy Club to be excellent with gf.

I haven’t tried the lentil ones but the rice pasta from Dove Farm are like the real thing (I buy them on Amazon)

Update on eating out gf: Bella Italia are amazing! The pizza bases are so light you can't tell the difference. They are also regular size - pizza express really disappointed us for having the same price pizza but much smaller.

I do a sweet potato, spinach and chickpea curry/stew with coconut milk and tinned tomatoes and spices which is nice.
omlettes
i make gf pizza from scratch with caputo flour.
chinese /Korean type soups with rice noodles
stirfry
mexican dishes with either corn tortillas or corn tortilla chips.

Gluten free is pretty easy. We eat lots of rice. We aren't technically need to be gluten free, but we avoid it due to my ds's wheat allergy. We have completely gluten free meals every day. Just use alternatives, like rice flour, etc., and we have very normal meals.

lots of good ideas, and I also find lunch the hardest and need more variety. Some of my favourite lunches just now are:


  • frying some chopped tomato, garlic, chilli, adding some beans (tinned black beans or chickpeas are my favourites), adding some Parma ham or chirizo, water and cooking for 5 mins and finishing with coriander and maybe some feta.

  • old El Paso do street food corn tortillas which are gf, so I like these to make quesadillas or tacos (especially if I have leftovers and a hot sauce).

  • I hate gf bread generally, but toasted with cheese and a tin of tomato soup is good

  • gluten free homemade crepes/English pancakes are good with a savoury filling (cheese, spinach, mushroom etc)

  • quick cook polenta with leftover meatballs, bolognese, Raghu, stew etc


I.ve tried a few buckwheat/grain recipes, which I always seem to enjoy but never make again.
