I’m making caramelised leek , mushroom and Stilton bake with a bacon crumb, proper winter fodder! Served alongside some broccoli and green bean. What’s on the menu at yours tonight?

pasta with garlic cream cheese,salmon and peas. Kids love it. Im not fond of salmon so Im having flatbread with houmous.

Not really, it’s pretty simple. Lay rashers of bacon on a non stick baking tray and bake in a low oven for about 30 mins until brittle.
Roughy shop and fry off a punnet of mushrooms and half and onion, remove from pan and add 2/3 leeks, some finely chopped thyme and a good glug of balsamic vinegar, whole grain mustard and allow to slowly colour. Gradually add about half a pint of vegetable stock and thicken with a little corn flour.
Pour all the veg and stock into an oven proof dish and poke in cubes of Stilton.
Put wholemeal bread in the food processor with the bacon and blitz to breadcrumbs. Tip over the veg and bake until the top is all crunchy.
