What's your go to Tray bake recipe

Meal planning and looking for inspiration.
What's your mid week, bung it in a tray and stick it in the oven recipe?

I do one from the fast 800 book that I’ve mucked about with.

Chuck chopped veg into tray (I usually do peppers, a courgette or two and a red onion), splash of oil, mix up. Season

Bake for 15 mins at 180°C fan, 200° non-fan

Add a salmon fillet per person (I like the ‘slightly smoked’ ones but ordinary is good too)

Top salmon with a tiny, tiny bit of cheese — either grated cheddar or Parmesan — mixed with a few grams of breadcrumbs or panko.

Bake for another 15-20 mins until salmon is cooked through.

It’s my one exception to the ‘fish and cheese shouldn’t go together’ rule.

I saw a recipe posted on my from *@snowpaw* and it’s a fav in our house, roast onion,carrots,peppers, green beans and garlic with chicken thigh on top for about an hour, then add jar of lloyd grossman tomato sauce and cheese on top and test through.

I serve with mini roast pots or rice.

@snowpaw I can’t find the thread to thank you for the recipe- I had screen shot it though Smile
