I love a tray bake! This curried cod and sweet potato one is a favourite.
But tray bakes don’t need recipes, that’s the best thing about them! I made a great one last week, sausages, parsnips, apple, leeks, shallots and thyme. Delicious!

Bbq Pork

I use about 5 chops (I usually spread bbq sauce liberally over them) & baby potatoes on a base of peppers red onion and near the end add frozen peas or broccoli

So easy and cook for about an hour in a tin covered in foil and take off to brown before I add the greens

I do chunky butternut squash, carrots, potatoes and red onion all in a little bit of oil, seasoning and fresh sage. Sausages on top and bake (also works with halloumi).
There's a sauce that goes with it which is basically onion marmalade and a knob of butter.

We love Jamie's Hit n Run chicken traybake from Save with Jamie. Chicken thighs, chunky peppers, tomato quarters, onions, garlic, thyme, balsamic vinegar, oil and paprika. Yum.

And don't bother peeling the squash. Cook it with the skin on. Banger.

My two faves are chicken, oregano and lemon tray bake which we have with crusty baguette.

Also tikka traybake or most things from Anna's Family Kitchen on IG.

Did you think they would be protestant tray bake cakes? I thought it was cakes too.

Lots of chopped roasted veg, carrots, onions, broccoli, cauliflower, potatoes, kale, cabbage and anything else lurking in the fridge. Top with chopped chicken breast and flavoured in Chinese salt, pepper and chilli.

It is our healthy go to meal and is even wolfed by the little ones that hate veg.

I opened expecting cake but actually loving this instead! Dh does green beans, potatoes, onions and pork loin drizzled in hoi sin sauce and always goes down well.
Looking forward to trying lots of these out.

Loving the ideas here My favourite is small cubes of butternut squash (often use frozen), sweet potato, onions and peppers - toss in oil and cook for 30 mins or so. Add a drained tin of chickpeas, stir through some harissa and add a block of feta on top and cook for another 15 mins. It's nice with cherry tomatoes too. Serve with some couscous.

Tian of roasted veg

Put diced aubergine and courgette in a bowl with some olive oil and toss. Place in a baking dish (not tray) with red onion slices and roast for 20 minutes. Add in some chunks of brie and olives and passata. TOp with bread crumbs and cook for another 30 minutes. Any left overs can be blitzed into a tomato sauce or used as a pizza topping.

I sometimes make this with salmon but then I put the veg on one half of the baking sheet and the salmon in a small oven dish on the other - I put a slosh of wine or lemon juice on the salmon and cover the dish with foil and then bake the lot for 30 minutes.

I saw a recipe posted on my from @snowpaw and it’s a fav in our house, roast onion,carrots,peppers, green beans and garlic with chicken thigh on top for about an hour, then add jar of lloyd grossman tomato sauce and cheese on top and test through.

I serve with mini roast pots or rice.

My easiest is a sausage traybake - basically just sausages, halved mini potatoes and whatever veg you have to hand plus 350ml stock and seasoning of your choice. Bung in an 190° oven, turn sausages after 20 minutes and then cook for 20 mins more or until the sausages are done. Best served with crusty bread to mop up the gravy.
