Best easy veggie recipes

We are considering going veggie and wondered if people could share their easy veggie recipes with me - looking for inspiration.

We like all vegetables and pulses but would like to avoid too much cheese (a bit is fine but we don't want to just substitute meat for cheese).

Also this one - people will probably come along to say how awful meat replacements are etc etc, and they often are and I didn't use them for the first few years of not eating meat, but for certain things I don't mind them now. In terms of meat replacement I really rate Sainsbury's shroomdigs in the freezer section. Other people must too as they're always sold out!

I always like any recipe with rice & beans/lentils together. Apparently there’s actually a scientific reason why they complement each other, they form a complete protein & your taste buds can recognise that. That’s probably why beans on toast are delicious - whole cereal grains will also make a complete protein if paired with beans.

My favourite pesto is by a company called Zest. I’ve been using it for about 20 years. DH likes it too & normally he wouldn’t touch anything that’s specifically vegan. It keeps for ages in the fridge. I really rate some of their other products too, very handy.

I agree with the recommendation for nutritional yeast - I sprinkle it on pasta, beans on toast, and add it to mashed potatoes! Its delicious!
