Best easy veggie recipes

We are considering going veggie and wondered if people could share their easy veggie recipes with me - looking for inspiration.

We like all vegetables and pulses but would like to avoid too much cheese (a bit is fine but we don't want to just substitute meat for cheese).

Oh and yesterday I made this soup(but when I remake will use less chilli or maybe mild chilli powder as hooottt!)
Butternut squash-roasted
Sweet potato-roasted
Fried garlic, ginger and chilli
Carrots
Coconut milk (the low fat stuff because I am trying to lose weight)
Coriander
Tumeric

I was going to add sweetcorn after, so there would be a nice contrasting texture, but I forgot.

Wolfed down an extra bread roll insteadGrin

If you’re beginners there are loads of good veggie foods before you tackle tofu. Just the Mediterranean/Italian dishes will give you plenty of delicious variety. I’ve been veggie and a foodie for over 30 years and tofu is the bottom of my list.
I didn't really like tofu until I went to Asia. So lush! I'd been vegetarian for around 20 years by that point. Definitely did lots of Italian and Mediterranean. I also did a lot of cheese with a side of cheese but I wouldn't recommend that for health reasons 😜

BBC good food Dahl with sweet potato and spinach is delicious and extremely easy

Other vege meals I’d suggest when you are starting out are crustless quiche or frittata, bean chilli, nachos or burritos with a bean mix, risotto ( I make a leek, pea and lemon one) vege spag Bol using lentils, vege pizza and vege lasagna.

If I type a word wrongly often enough autocorrect will give that spelling as an option. It may be you’ve typed it wrong in the past and now your phone thinks it’s an actual word.

This is easy and delicious once you’ve done it once. Can be made with rice or quinoa and if kids don’t like fried egg you can do egg fried instead.

I use a potatoe peeler to cut ribbons of carrot and/or cucumber for the quick pickles. They are easier than they sound.

It n other dishes, We love the caldron marinated tutu bits and use it instead of quorn or chicken in stif fries etc. I don’t worry about the salt if it’s mixed with lots of veg and rice or noodles.

The Minimalist Baker is a nice recipe blog, most of which is vegan and vegetarian. And I like their cheerful writing style!

The almond butter tofu bit of this recipe is amazing (and they give a great low-tech way of pressing tofu, should you want to do that - just wrap it up in a clean tea towel and put something heavy on top!) The almond butter sauce is very satay like.

I didn't have any aubergines the day I made this so I just did it with the tofu, sticky rice and a gingery/ spring oniony veg stir fry and it was bloody lush.

Also don't feel you have to go 100% veggie from day 1 and that you've failed if you haven't. We're about 80% veggie here and I'm perfectly happy with that for now. Good luck!

Oh, and quesadillas! These are also bloody lush, and really quick and easy. We have these with carrot and cucumber sticks to provide a veneer of healthiness, and a big dollop of sour cream (for um, unnecessary calories ...calcium?)

Easy Quesadillas
1 tin beans in water (kidney, borlotti, mixed etc.)
1 small onion, finely chopped
1 clove garlic, finely chopped
1tsp smoked paprika/ Cajun spice mix/ Mexican seasoning mix/ chipotle paste
75g grated cheese
Pack of tortillas
Vegetable oil for frying

  1. Mash the beans in a large bowl. Add the onion, garlic, seasoning and cheese and mix together.
  2. Cut tortillas in half (for small ones) or quarters (large ones). Put about a tablespoon of the mixture onto half of each piece of tortilla, then fold the other half over the top. The filling should be about 70mm/ ¼ inch thick - too thick and the onion doesn’t cook and it all leaks out.
  3. Shallow fry in a little oil for about 5 mins on each side until golden brown. Drain on kitchen paper and eat while hot. They also reheat easily the next day, or can be frozen.

Tagine
slice & fry an onion & a chilli (or half if its strong or to your taste) than cumin seeds & ground coriander &smoked paprika than add chopped capsicum, sweet potato, butternut squash add half a can of crushed toms (or to taste more) and some sliced dried apricots - cook slowly for an hour add your favourite herb (coriander or mint) & than drain & add a tin of chick peas & warm through - you can cook this in slow cooker add salt to taste

cube the block and shallow fry to stick in a stir fry.

Crispy on the outside, squidgy on the inside. Delicious. It's converted my family.

Vegetable fried rice with whatever veg you fancy plus soy sauce is quick and easy.

Puff pastry with pesto, veg and a sprinkling of cheese.

You can do a veg version of kedgeree

OP, if you’re just reducing the amount of meat and products you’re eating, this won’t apply but if you want to eliminate all animal products, check cheese packaging or anything with cheese in it, as some contain rennet from killed calves.

Pesto in particular can be problematic as it often contains Parmesan (not suitable for vegetarians).

Its really tasty. I made it a lot and the good thing is any veg goes. I roasted cauliflower and added that the last time.

You can make vegan pesto with walnuts and a high speed blender. You can also buy it in the free from section in most supermarkets too.
