What’s everyone having for dinner today?

I need some inspiration. Don’t fancy a roast, but want something a bit more special than we would have in the week.
Any ideas welcome, and links to recipes please!

Last night we had Mexican Pibl, it was divine!

Tonight to mark end of holidays, and make it nice and relaxed, it's F&C, if the weather is nice, down by the Thames, with a glass of bubbly.

I’m making Chinese style chicken livers. My daughter was showing an interest in my recipe box, which I’ve had since I was a teenager, and we were looking for the oldest recipes in it. Some were ones I still make regularly, but this stood out as neglected, so I’m giving it a go again.
That sounds interesting! Sadly no one else in the house eats liver or Chinese Confused

Just popped a couple of duck legs in the sous vide - will be ready by 8pm. Will serve them with pommes ana, plum and balsamic sauce and creamed spinach.

Wouldn't normally do this but it's DP's birthday on Tuesday!

Chicken satay curry with rice and naan bread. It’s a cheaty easy version, but so tasty:

Brown your chicken and chop an onion and garlic while that cooks
Add those, and chop a red pepper
Add a couple of tablespoons of Thai red curry paste and your pepper, leave it for five minutes or so
Tin of coconut milk
Two tablespoons of crunchy peanut butter

I add coriander at the curry paste stage, and tend to make it at lunchtime then leave it cooking down on a very low heat for an hour or so before re-heating at dinner time.

Roly-poly chicken.

Flatten a chicken breast, lie smoked ham on top then a line of gruyere cheese down the middle. Roll it up and secure with toothpicks. Then use 3 bowls one flour, one egg and one breadcrumbs. Roll the chicken in the bowls in that order to coat them.

Finally bake

I have a beef stew in the slow cooker, I'm going to make dumplings. Not particularly special but I'm looking forward to it.

We are having a roast chicken dinner, for a change. We usually have a takeaway from our local Italian restaurant or have bacon or sausage sandwiches for lunch and something like pulled pork, lamb or beef (Greek style) with chips, salad, dips and flatbreads

We are going out for dinner with the dc tonight, one last hurrah before everyone is back to school tomorrow. Walking so dh and I can share a bottle of wine too!

We were going to have a roast but it's a bit too warm for that today. I've instead spatchcocked the chicken and it's marinading in garlic, lemon rind & juice, rosemary, salt & pepper and oil, and it will either be bbqd or oven roasted. I'll do salady stuff with it.

Going out for a Carvery as I'm too tired today too cook a full roast 😂 would much rather get the house cleaned and tidied than cook when someone else can do that for me!

Jacket pots as that's all I can face after a horrific weekend of hypermesis and d&v I can barely face food. Lots of lovely ideas for during the week though!

No idea but my shopping is being delivered so I may just pick at the cold meats/cheeses/salads etc plus the profiteroles for dessert.

Lovely day here today, so we're having a bbq. Will bake potatoes in the oven for a couple of hours to get the skins nice and crunchy, and make tomato and mozzarella salad etc. Yum!

Not inspirational at all- roast chicken, veggie pie for me, roast potatoes, carrots, peas, cheesy leeks, cauliflower cheese, green beans, stuffing and Yorkshire puddings. We haven't had a roast in so long I decided to go all out.

I am not cooking this, it's coming from the local take away. When I've been under the weather it always makes me feel better!

Ds16 just found out he got the job he interviewed for on Thursday so he’s asked for a Chinese takeaway to celebrate
