Needs to be family friendly as my toddler loves pasta and all I can muster up is bolognese !!

So this isn’t very ‘mumsnetty’ but it’s delicious and quick, like a mix between a carbonara and a Mac and cheese, but we always have the ingredients in the house so it makes a very quick meal.

Fry smoked bacon cut into small pieces,
Fry some chopped mushrooms,
Boil some pasta (our favourite is fusilli)
Use Coleman’s cheddar cheese sauce sachet - add milk and whisk until thick (takes 2 minutes) or use a supermarket ready made fresh cheese sauce- or you can make one from scratch (which I do sometimes but it’s honestly quicker and as nice with the sachet)
Mix all the cooked components together, sprinkle some cheese on top when serving up if you want. (I find it cheesy enough as is)

Yes yes yes to cacio e pepe. Very quick and very tasty. The best pasta dishes have only a few ingredients and are fairly simple to make, and very delicious.

idontlikealdi · 03/05/2021 23:06

Literally anything.

Marmite pasta is fab, Chuck some tender stem on the side

Slow cooked beef ragu

Chicken and pesto

Sausage, fennel and tomato

Ham, cream cheese and less

Salami, pine nuts, red unions and tender stem

Mac and cheese

These all sound delicious. OP did you see the thread over the weekend about roasted or fried gnocchi?

Boil some pasta & vegetables together in one pan. Broccoli, peas, carrots, sweet corn, sugar snap peas etc all work fine. Drain into a sieve. Into the still hot pan, dump a big spoonful of cream cheese & a small glug of milk. Add a little garlic purée, pepper & mixed dried herbs. Heat gently if necessary to melt it. Add the pasta back in as soon as it’s getting melty. Stir in some grated cheese. Serve on its own, with chopped up bacon, sausage, leftover roast meat, ham, whatever.

Takes about 4 minutes actually at the stove. The rest of the time is just waiting for the pasta & vegetables to boil. We call it Easy Peasy Pasta. After something that annoying twat Bing eats that looked really similar, DD asked me to make it one day so I did.

Pats with chopped chicken, onion, fried, glass of wine and after 5 montes 60ml cream. Spinach if desired. Serve with Parmesan.

BlankTimes · 03/05/2021 23:26

In each serving bowl put a generous glug of unfiltered extra virgin olive oil, dried Italian herb blend powdered in your fingers, salt and a good freshly ground pepper like Tellicherry.
Add cheese of choice, either cream cheese broken into small pieces or finely diced hard cheese.
Add fresh black olives.

Optional, add cooked finely shredded wafer thin meat or cooked finely flaked fish of choice.

Cover and leave at room temperature.

Cook the pasta, drain, add to bowls whilst very hot, stir and serve immediately.

Good quality ingredients make all the difference, my family like Aldi's 'Specially Selected' rigatone pasta for this dish.

Chopped bacon fried, add philadelphia and spinach (can also add cherry tomatoes) and mix in the pasta. This is the requested pasta dish for my kids after spag bol.

BadlydoneHelen · 03/05/2021 23:31

There are some really nice ideas here- I'm normally do carbonara if in a hurry but will have to try some alternatives

Msfoxy17 · 03/05/2021 23:37

A really easy one with veg - roast selection of veg in oven (tomatoes, courgettes and red onion work work with some olive oil and salt and pepper. Roast until nice and soft.
Cook pasta on hob. Mix in red pesto and roasted veg. Top with cheese - personally really like some goats cheese but could also be parmesan or cheddar. Bit of basil if you like.

weegiemum · 03/05/2021 23:59

Pasta, jar of pesto, red onions and fried bacon. Pine nuts on top if you like.

Drain the oil from a tin of anchovies into a large pan and use it to soften a finely chopped red onion. Add anchovies to pan and mash up into the onion.
Boil broccoli in a separate pan until soft. Strain and chop the broccoli really finely. Add to the onion mixture together with cooked pasta and mix together with a splash of the pasta water.

Delicious and doesn't require cheese.

Looks delicious.

We had tortellini tonight, with a mushroom sauce (onion, mushrooms, wine, cream, a stock cube and a bit of paprika).

joeysapple · 04/05/2021 19:24

Some of these sound amazing, I'm sad I've already started cooking for tonight!

mimirouge · 04/05/2021 19:27

These are brilliant. I do chopped shallots, add some white wine, then some creme Frau che and smoked salmon.
