Give me a good and easy pasta recipe please

Needs to be family friendly as my toddler loves pasta and all I can muster up is bolognese !!

Cry a chopped onion. Add packet of smoked salmon trimmings and some cream and lemon juice. Mixed in cooked pasta.

From some mushrooms and bacon add cooked pasta and grated cheese.

Chopped spinach or peas also optional.

Oh another new one. Roast some Boursin and cherry tomatoes with a little olive oil in the oven and mix into cooked pasta.

Veggie one - cooked pasta, stir through green pesto, chopped cherry tomatoes, grated cheese and pine nuts

Meat one - I usually use linguine or tagliatelle for this. Fry off some onions, add cooked chicken, half a tub of Philadelphia, 2 chicken stock cubes with 300ml water, mix through, let simmer so it thickens, add cooked pasta. Delicious! Also had it with cooked strips of beef

Chop some mushrooms and fry with garlic, add a tub of creme fraiche ( equally good with half fat ), then a teaspoon of cayenne pepper. Then add a can of red or pink salmon. Serve over tagliatelle.

Roast a pack of cherry tomato’s with some chopped garlic, pop block of feta in centre, splash of olive oil, roast for about 35=4o mins, cook some pasta separately. Add pasta to the tomato and feta, mix, season, add fresh basil or parsley. Serve, very easy and tasty, you can omit salt for your toddler.

Stir in tuna/mayo/sweetcorn and whatever other veg you like

Stir in poached salmon, creme fraiche, sweet chilli sauce and any other veg you like

Chicken Alfredo - creme, egg yolks, garlic, black pepper, parmesan, spinach and chicken

A lot of my favourites have already been mentioned but I just tried cacio e pepe tonight for the first time and it was great. Just boil pasta, then when it's nearly cooked scoop out a mug full of starchy pasta water. Grate cheese finely, add loads of black pepper, then beat in a pan adding a little of the pasta water at a time to make a sauce. Add the pasta and just keep beating until it gets really creamy. Three ingredients....pasta, pepper, cheese and it was lush. You could add peas or other veg to the pasta pan as it cooks too.

Cook pasta - linguine works well with this, but you could use spaghetti or anything I suppose.

When cooked, drain. Add lemon juice, salt, pepper, crushed chillies (I use dried), king prawns and either some extra virgin olive oil or cream cheese. You could also add halves cherry tomatoes if you like them. You could also substitute the prawns for crab if you like it.

Well the classic simple pasta dish has to be spaghetti aglio e olio. Get the spaghetti cooking, heat some olive oil in a pan, throw in chopped garlic, fry off for a couple of minutes, add dried chilli flakes, cook for a minute longer. Then add your cooked spaghetti and a spoonful of the pasta cooking water, toss together thoroughly, serve with freshly grated parmesan on top. Takes minutes and is so delicious. Though not so great on the vegetable front I guess, but you could always have salad on the side.

Another couple of super easy favourites:

Those packs of fresh tortellini (whichever flavour you like) cooked and tossed in garlic butter.

Fried garlic and chilli in olive oil with spaghetti.... that's it.

Couple of anchovies and some garlic cooked down in a pan until they're just mush with olive oil and spinach, stir in cooked pasta and top with crispy breadcrumbs.

Fry garlic and chili flakes in olive oil, add few spoons of tomato paste and fry a little. Add double cream and mix and then cook for 5 mins.

Boil the pasta and steam broccoli and carrots on top.

Serve with grated cheese!

There’s a recipe in the What Mummy Makes Book for creamy leek pasta which is so simple but really nice. Basically cook the pasta, finely slice the leeks and fry in a mix of olive oil and butter for as long as it takes the pasta to cook - add the occasional splash of pasta water to help them really break down. When they’re really soft stir in some cream - I can’t remember if she says to add grated cheese as well but I always do, combine with the pasta and good grinding of black pepper.

Another one I like is roasting a load of veg, whatever you fancy - I like to include sweet potato, butternut squash, red onion, courgette and peppers or sometimes I’m lazy and just buy those ready to roast Mediterranean packs - roast in garlic oil with some balsamic vinegar (optional but I like it). Add cherry tomatoes for the last 10 mins,
Stir into cooked pasta and crumble over some feta.

Cook orzo as per packet instructions, add frozen peas for last 5 mins or so. Cook some king prawns in garlic oil and when they’re pink pour in the juice of a lemon. Combine with orzo/ peas and some chopped parsley.
Can also add some creme fraiche but it’s nice without too. Think this is also a What Mummy Makes recipe - I’ve done it with chicken pieces instead of the prawns for DH and DD and also did it with just broccoli in place of the fish/meat which was nice too.

That was going to be my suggestion, except I use 2 packets of cherry tomatoes

It’s really nice and because it’s just bung it in the oven then mash and mix through pasta it’s really easy.

Ooh loving all these pasta recipes! You've probably already got too many OP but can I put a vote in for the Bosh recipe for easy peasy pasta? Depends on how fussy your toddlers are and your definition of 'easy peasy' but it was basically loads of chopped veg covered in passata and roasted in the oven. Then mix with your pasta of choice 😋

One for using leftover ham (or you could also use chopped pancetta). Dice onions and fry off in a heated pan. While the onions are cooking, slice mushrooms and add them and the ham/pancetta. Get the pasta of your choice cooking. Cook the mushroom, onion, ham mix for a few minutes then throw in some tinned cherry tomatoes. Simmer for a few minutes, pour in some double cream, add black pepper. Stir together then toss in the cooked pasta. Serve with freshly grated parmesan. Not my recipe btw. I can post the exact quantities if you'd like.

Also love a good sausage pasta bake. Whatever veggies you like, chipolata sausages, garlic, chilli flakes, passatta, then bung it in the oven with cheese on top to bake.

The most delicious pasta sauce for me is the easiest (and unhealthiest) - I never knew the trick to making it but it came up in a cooking class I did with Angela Hartnett.

Sage butter
Equal parts butter and vegetable stock (eg 50g and 50ml)
Melt butter and whisk in stock - keep whisking until it comes to the boil

Chuck in chopped sage, season and add grated hard cheese (I use grana padano usually - generally a bit cheaper than parmesan but lovely) then add pasta and mix

That’s literally it. Takes a couple of minutes but it’s all silky and beautiful. If you use really good quality butter (Waitrose have a lovely one with sea salt crystals) it’s absolutely amazing - especially good with handmade filled pasta, but also good with shop bought stuff

Other favourite of mine is just passata, marscapone (or creme fraiche if that’s what you have), pancetta / streaky bacon and whatever cheese you have bunged in there.

I never used to like eating home made carbonara as it never came out right but have made it a lot recently as I tried a different technique and it was delicious

  • Boil spaghetti
  • Cook pancetta in a frying pan with two peeled cloves of garlic until crisp
  • when pasta is done, remove garlic gloves, then use tongs to move the spaghetti to the frying pan, and toss, cook for a minute
  • mix 3 eggs with parmesan / GP and pecorino, season
  • take frying pan off heat and add the eggs, keep moving
  • Add some of the pasta cooking water to the frying pan as you go, until you have a lovely glossy sauce (this makes all the difference)
  • top with more cheese and chopped flat leaf parsley

We had cacio e pepe last week for the first time - really delicious. You can add green beans, broccoli or asparagus if you want to increase the veg content.

My daughter loves Jamie's pea pasta which you can cook with or without bacon.
