Your best sides to go with a roast

I'm getting bored of just steaming veg so need some inspiration for delicious side dishes for a roast. Can cook decent roasties, mash and yorkshires but need to make the veggies more interesting. Any ideas?

We love cheesy leeks!

I always roast carrots, parsnips and beetroot together, do a cauliflower cheese and make homemade stuffing (very easy).

I like to sauteed sliced leeks in butter with either some garlic, chili flakes or caraway seeks, then add shredded cabbage (or kale or brussels, whatever is easily available), then put the lid on and let it steam away for a few minutes. Throw in some frozen peas (or broadband or green beans - whatever is at the top of the freezer drawer) and let steam until they are booked. Salt and black pepper! You can add bacon or chorizo, or a squeeze of lemon and a done grated parmesan, or another bit of butter.

This might sound a really stupid question but how do you hollow an onion?
ZeroFuchsGiven · 28/03/2021 12:05

Leeks in Stilton sauce is always my favourite.
