Your best sides to go with a roast

I'm getting bored of just steaming veg so need some inspiration for delicious side dishes for a roast. Can cook decent roasties, mash and yorkshires but need to make the veggies more interesting. Any ideas?

ZeroFuchsGiven I usually use fairly large onions chopped in half. Lay on roasting tray with a splash of water and cover in foil. Then put them in the oven to steam for half an hour. When you take them out the steam will have softened them so you can remove the centres with a spoon. (You need to let them cool for a couple of minutes first). Then you can stuff them, drizzle with oil then return to the oven to roast. It’s a bit faff but I’m more than happy with this as a veggie main for a roast.

Peas à la français.
Roast parsnips.
Cauliflower cheese or leeks in cheese sauce.
Baked fennel.
Stuffed tomatoes/courgettes
Courgettes in a creamy,eggy bake with tarragon.

I literally thought you meant hollowing a full onion Grin

Wouldn't it just be easier to cut in half, remove the middles and stuff without the steaming?

Roasted root veg
Roasted or stir fried sprouts
Orange mash (any orange ish root veg mashed)

Parsnips, sweet potato and red onions roasted together, with kale loosely mixed in a bowl with some pressed garlic if you’ve got it) stirred in at the last ten minutes.

Cauliflower cheese.

Depends on the meat.
Beef it ours be Yorkshire puddings, cauliflower or broccoli cheese, roast rot veg - beetroot, carrots, celeriac and parsnips. Baby leeks with cheese, mashed swede with mace.

Lamb might be stir fried green beans, pepper, baby corn and onion, in mint butter. Hassleeback potatoes or dauphinois. Fennel. Roasted and mustard glazed baby turnips. Roasted half elephant garlic. Usually a herb stuffing.

Pork maybe stuffed apple cups, crackling obviously, Brussels sprouts stir fried with pancetta, red cabbage with apple and star anise, celeriac purée. Carrots roasted with paprika.

With a salmon, I’d do asparagus if in season, peas with baby silver onions, sauté courgettes, roasted lettuce or chicory.

Correction - the French pea thing uses lettuce not cabbage! I love it but you can tell I never actually make it myself!

And yes, agree with a PP, Hasselback potatoes are divine!
