Your top 5 weekday meals

I'm trying to build up a repertoire of weekday teas so that we stop eating the same ones week in week out. I do simply cook to add some variety and ideas but this is mainly for DP and I as DSC wouldn't really like any of it yet.

So what are you top 5 weeks day dinner time meals? 😊

Thai curry of some sort

  • Mince in some form - bolognaise, chilli, lasagne
  • Noodles with salmon and stir fried veg
  • chickpea, cauliflower and spinach curry
  • pasta with broccoli, bacon and pesto
  • risotto - either chicken and mushroom or prawn and pea.

Adding so I can read and take note.

Easy but popular one even with fussy child - pork loin and prunes. This James Martin recipe. Dead quick and tasty.

@AnathemaPulsifer apologies for the delay, I've not been on mn for a few days
This is to serve 1, but it can be multiplied up - just be careful with multiplying the garlic/ spring onion/ chilli or it'll end up inedible! The pepper can also go in before the sauce if you prefer it soft rather than crunchy
Indonesian Hotpot
Serves 1
1 tblsp sunflower oil
1 clove garlic – crushed
3 spring onions
1 slice ginger – peeled and finely chopped or grated
Sprinkling of chilli powder
1 dsstsp peanut butter
1 dssrtsp soy sauce
Pinch of sugar
Grating of lemon or lime rind if available
¼ stock cube and ½ pint water
1 fillet white fish
Small handful cashew nuts (optional)
1 portion of noodles
2 tbslsp frozen peas
½ red pepper, chopped.

Method

  1. Heat oil in large pan/wok. Add chopped garlic, spring onions and ginger. Fry 1 minute. Add peanut butter, soy sauce, chilli, lime rind, sugar, and stock. Bring to the boil.
  2. Add fish, nuts, noodles, peas and pepper. Cover, simmer for 5 – 10 minutes.
  3. Serve.

DS is 11 - for context

Pizza Tuesday (cleaner’s just been)
Crab tomato / puttanesca / broccoli garlic and chilli pasta. In fact, any pasta.
Lentils (family recipe)
Prawn Thai green curry (Jamie)
Jerk chicken (Bart spice rub is fab)
Roast chicken (standard or Spanish style)
Cauliflower and sardine mornay - don’t heave, it’s actually
Sausage casserole
Lamb harissa stew (😍 Belazu rose harissa paste)
Standard steak
Veg stir fry with Asian marinated roast salmon (25mins) and jasmine rice
Beef chilli
Crab stuffed jacket potatoes
Cod and chorizo stew

Besides the roast/stews/casseroles they all take less than half an hour to make and don’t create too much washing up - that’s the bit I resent the most.
Some recipes take only the length of time it takes to boil rice.
Need lots of varied ingredients and condiments, but then the world’s your oyster and you’ve got the basis for all of your own sauces rather than relying on jars (although they do have their place!)

Homemade chilli, or lasagne, salad, baked potato for DS!
Homemade crispy chicken strips with steamed rice and veg.
Homemade frittata (using up left over veg) with salad
Homemade lentil and veg soup, served with bread out of the bread maker
Scampi, oven chips and peas for a quick option.
Bought pizza bases - then add own toppings (cheaper and nicer than bought ones)
Roast chicken dinner
Chicken wraps (using up left over chicken from roast) with El Paso kit.
Sausage casserole with beans and mash

Chicken, coconut and sweet potato curry
Bolognese
Carbonara (recipe from an Italian who happens to be an excellent cook. So bloody simple too😂)
Chicken in a random Maggi juicy bag. With cous cous and green veg. Or baby potatoes. Not in the least bit embarrassed. They’re great esp the garlic chicken one.

Looking at the others, I must do more jacket potatoes with some kind of filling.
The kids also love pesto. From a jar!
