Your top 5 weekday meals

LMW1990 · 13/01/2021 20:23

I'm trying to build up a repertoire of weekday teas so that we stop eating the same ones week in week out. I do simply cook to add some variety and ideas but this is mainly for DP and I as DSC wouldn't really like any of it yet.

So what are you top 5 weeks day dinner time meals? 😊

Spaghetti Bolognese.

Steak & kidney pie with potatoes and vegetables, green beans v. popular.

Homemade pizza.

Cassoulet.

Chicken casserole.

Other midweek favourites include cauliflower cheese with sausages or gammon, hearty soups such as minestrone or fish chowder followed by an omelette, risotto especially chicken, chicken supreme with rice or pasta.

Spaghetti bolognese
Chicken, chorizo and potato traybake - Nigella has some great versions of these and they are very simple and quick to throw together.
Sausages and mash
Thai curry of some kind (usually prawns and veg)
Tostadas - crispy tortillas topped with retried beans, chicken, salad, avo, lime juice, coriander, salsa, cheese, ( a mix and match kind of dinner)
Beef and Guinness stew on days where I remember to plan ahead!
Egg fried rice with whatever meat/veg leftovers are in the fridge - my 6yo loves this so much.

Meatballs and pasta
Pitta breads, falafels or kofte kebabs, salad, hummus, herby yoghurt.
Fish fingers, pizza, chicken dippers, pesto pasta etc on days when I haven't got energy to cook.

DinosApple · 14/01/2021 07:04

Stir fry
Jacket spuds and fridge pot luck
Bolognese/chili
Stuffed pasta and veg sauce
Spinach and chickpea curry

Also:
Freezer surprise (chips, peas and fish fingers/fried egg/veg pie etc)

Mine are all fairly quick- under an hour, and low effort. I can't be doing with DC (or me) being hangry when we get in!

Also the ones that need to be easily adaptable for fussy DD1 are. She doesn't like meat, or butter, or egg yolks.

Chicken satay stirfry - cheats satay sauce of smooth whole earth peanut butter, soy sauce and sweet chilli sauce mixed together

Honey and soy salmon with noodles and veg
Naice chicken Kiev with veg
Jamie Oliver's roasted veg chilli
Omelettes with salad or beans depending on the weather and sometimes oven chips

We're all fussy in different directions, although DH is probably the least fussy. DD and I are veggie, DH will eat veggie most of the time, occasionally adds some meat or, more often, fish.

This week, Monday was broccoli and leek risotto with lemon and basil, an old BBC healthy eating recipe, supposed to be pearl barley but we prefer rice so I use that.

Sweet potato katsu curry, the sauce freezes so I make a double batch and this week just got it out of the freezer.

Pasta with tomato sauce and lentil and spinach balls. Again, big batch of balls, got them out of the freezer.

Sweet potato, spinach and red lentil dhal

Bean stew with butter beans, lots of veg and sweet smoked paprika. It used to have quorn sausages in until they discontinued the ones we like so now it doesn't.

This week it is/was

Braised cows cheeks in red wine and cumin and various other spices, green veg and roast potatoes.

DH cooked this, so as ever lots left over, so we had it with very garlicky mash and veg on the Monday.

Tuesday, chicken stir fry with fresh ginger, loads of garlic and noodles, carrots, broccoli, fine green beans.

Wednesday teriyaki salmon panfried on a very hot pan so the inside is very pink, with jasmine rice, warm teriyaki sauce and panfried sesame seeds black (Japanese) and normal sesame seeds. Green veg.

Tonight, baked gammon with a white sauce with very finely diced white onion in it, green veg and new potatoes.

Tomorrow is ehhhhhhh what day is it.... Grin , seriously, tomorrow is take away night,

Saturday, home made burgers with a double cream and mushroom sauce, wedges with paprika.

Sunday , rolled rib of beef, with all the trimmings,

Monday, stir fry with the left overs

And so it begins...... again
