Please tell me your best chocolate cake recipe!

I made some Mary berry cupcakes at the weekend and they were utterly tasteless. Has anyone cracked the secret to a really scrummy chocolate cupcake?! I will be eternally grateful to know it!

I’m a former cake maker. The best chocolate sponge recipe is from the Hummingbird Bakery - Mississippi Mud Cake. It works in cupcakes as well as tins, and freezes and carves brilliantly.

It scales up well, and I've baked it in different shaped tins well too.

And it freezes brilliantly, so bake ahead of time, then just defrost and fill/ice. :)

(I don't use her icing, I just melt dark chocolate and add a bit of unsalted butter so it doesn't crack when cut).

My Grandma's. It was the highlight of our weeks caravaning holiday. The year she forgot to bring it with her was torture although apparently my Grandad and Uncle has a merry old time scoffing the lot before we got back 🤣 can't remember the recipe though

Ee don't do the 2 tin version just bang all the cake batter in and bake 2x as long. It's great food for the soul but terrible for your waistline

Barefoot Contessa always adds vanilla and espresso - you can use powder or cold espresso coffee - to chocolate to intensify the chocolate flavour. It does work. I sub some of the flour in a Victoria sponge recipe with cocoa.

I like this recipe for healthier chocolate buns without scrimping on flavour:

120g ripe banana
2 eggs
65 ml veg oil
2 tbsp milk

120g flour (I use a mix of self raising & wholemeal)
1/2 tsp bicarbonate
3 tbsp cocoa powder
70g caster sugar
60g chocolate chips

Mash the banana and mix all the wet ingredients together. Add dry ingredients & mix.
Split between 6 to 8 cases.
Bake at gas 5 for 20 min.

My mum and I always use a recipe that was on the pack of caster sugar back in the 90’s.
It’s so easy and is excellent every time. I’ll try to attach a picture.

I vote for Nigella's chocolate raspberry pudding cake - slightly gooey in the middle but so good!
