I made some Mary berry cupcakes at the weekend and they were utterly tasteless. Has anyone cracked the secret to a really scrummy chocolate cupcake?! I will be eternally grateful to know it!

This recipe was on the cardboard sleeve that my cake tin was in. As you can see by the state of it, it is very old and well used!
This is the most chocolatey cake ever. I either make cupcakes, keep it as just sponge and have with custard for a winter pud, or fill with chocolate butter cream and top with melted chocolate for birthdays. I do it at around 160 in my fan oven. Best chocolate cake recipe I’ve baked.
Enjoy!

I love Nigella Chocolate and orange marmalade, I don’t see a reason it cannot be turned into cupcakes. Some ganache and candied orange on top, perfection.

Sexnotgender · 23/10/2020 14:12

Nigella’s chocolate Guinness cake is lovely.

@Idoknowwhatyoumean - looks good! Can you tell us the diameter of your tin?

Idoknowwhatyoumean · 24/10/2020 15:50

@LadyAddle I either use 2 x 20cm cake tins if I’m making a birthday cake with filling or a 20 x Roughly 27cm rectangle mini roasting tin If I’m just doing it to have sponge and custard or taking it as a tray bake to work.
I always line tins with baking paper.

I know pp like Nigella Lawson but I ended up sending her books to the charity shop. I could never just grab a book off the shelf and bake with ingredients I had in the cupboard, there always needed to be some odd ingredient for a cake that I’d be missing and need to dash to the shop for.

This one. It’s so good I once made it for a friends birthday and had to make another as I ate 3 slices of the original Blush

It’s my go to celebration cake and there’s never been so much as a crumb left.

glazeover · 24/10/2020 15:52

Any of Nigella’s.

tortiecat · 24/10/2020 15:53

I love these, but following the thread with interest as keeping fingers crossed for regular" chocolate chip muffins / cupcakes or similar...

You can split the batter into cupcake cases and use the frosting to top.

lanbro · 24/10/2020 15:59

Triple Chocolate Fudge Cake...all in one and so tasty

125ml oil
250ml milk
3oz cocoa
8oz plain flour
12oz sugar
2 eggs
1.5tsp bicarbonate
1.5tsp baking powder
1tbsp vanilla essence

Mix then add 250ml boiling water

Bake at 180 for about 40 mins

I use this for all my celebration chocolate cakes and in my shop and always goes down a storm. Just half the recipe and bake for less for cupcakes

CoffeeBeansGalore · 24/10/2020 16:04

Ultimate chocolate cake on bbcgoodfood.com.

I split it between 3 tins rather than in 1 & cutting it later. Also cut out 100g of the sugar.
Gorgeous cake

EssexGurl · 24/10/2020 16:38

Second for BBC Good food ultimate chocolate cake. It is amazing! DD are making it next week for a half term treat.

ThatScottishGirl · 24/10/2020 16:40

Is the ultimate chocolate one the one with oil in it? If so it’s excellent.

AgeLikeWine · 24/10/2020 16:48

I love Nigella’s chocolate Guinness cake. It’s a dark, rich, slightly bitter chocolate cake, perfectly balanced by the slightly tart cream cheese frosting. It’s perfect for grown-up palates who prefer dark chocolate to milk.

ilovebruuuceandbags · 24/10/2020 17:01

@ThatScottishGirl www.bbcgoodfood.com/recipes/naughty-chocolate-fudge-cake I think this is the one you mean...I've been making it for years and wins hands down over every other chocolate cake have baked. Its so light and moist, lovely!

planningaheadtoday · 24/10/2020 17:03

I have a recipe from an old family friend that is my best fail safe for moist chocolate cake.

Normal Victoria sponge recipe with the following additions/ changes

Deduct an oz of flour

Add in 3 0z of good quality drinking chocolate sifted with the flour.

Add in an ounce of cocoa powder.

And two tablespoons of boiling water to the final mix.

It's an ancient Swiss recipe apparently, handed down for many generations.

APurpleSquirrel · 24/10/2020 17:08

This is my go to chocolate cake recipe, though I double the chocolate buttercream amount:

Nancydowns · 24/10/2020 17:11

This one has always come out well. Just reduce the cook time for cupcakes.

addapinch.com/the-best-chocolate-cake-recipe-ever/

Nigella does a devil's food cake as well which you can use as cupcake batter. Again just reduce the bake time down.

ThatScottishGirl · 24/10/2020 17:45

That’s the one @ilovebruuuceandbags!! Fantastic cake.

cookiemonster5 · 24/10/2020 17:49

Tasty has the best recipe ever. It's called the best chocolate cake. It's quite involved and has a couple ingredients that make you go "eh? Why?!" But trust me it's amazing. Even people who don't like chocolate cake have told me how much they love this one. It's always requested by my eldest for his birthday.

NothingTraLaLa · 24/10/2020 18:00

This one is great, it's like a cross between a cake and a brownie. I make ganache rather than buttercream, and don't add the cat decorations.

This is the recipe I have a lot of success with - makes a lovely, light and tasty cupcake and is extremely easy to bake. www.bbc.co.uk/food/recipes/chocolate_cupcakes_14164
