Beef - it’s the only meat I can’t cook well so we don’t have it often. Lamb is my fave but u can’t sacrifice a side to have mint sauce!

I would ask to see cook's qualifications for cooking this meal and their understanding of it. I want lamb, but if I have mint sauce I can't have stuffing?

Probably none of those puddings after a roast - I'd probably have crumble (apple or apple and raspberry, don't like blackberries) and custard (or at Christmas mince pie and custard or cream)
